September 26, 2015 by predominantlypaleo 11 Comments

I know some of you are struggling with your health right now and I know first hand just how hard that is. I know what it feels to be hopeless, dying, and without answers. I wanted to put together a few elements of healing that I personally have found to be absolutely essential to moving…

Down South Paleo Resource Page

August 30, 2015 by predominantlypaleo 11 Comments

Y’all have inspired me to make this reference page for Down South Paleo so that you can see all the ingredients I use, where I get them from, and what brands I typically purchase.  I will also notate substitutions as I have received them from readers, even if I have not tried them myself. Please…

A Big Giant Texas Hug

August 12, 2015 by predominantlypaleo 14 Comments

This morning I had to set my alarm for 6.30am so I could register my middle daughter for gymnastics. Yes, that is the crazy place I live in where registration opens at 7am and by 7.05am, the slots are filled. So I sat in my dark quiet room, in my warm bed and with one eye…

QUESO BLANCO {Paleo/Vegan}

July 8, 2015 by predominantlypaleo 25 Comments

Technically I should call this Anacardos Blancos I think, since it is not “cheese” in the moo-ey sense of the word. But I am sticking with Queso Blanco and here’s why… it is no secret I love cheese. And when I say love I mean I am a cheese stalker. I will seek out cheese…

Cassava Flour Pizza Dough + Vegan Cheese

July 6, 2015 by predominantlypaleo 66 Comments

I’m gonna need everyone to take a deep breath before we dive into this one…for a few reasons actually. 1) This is really exciting – I made a pizza without dairy or grain entirely in my kitchen (no fake store bought cheese) and my kids freakin’ loved it. They did not even ask me if…

June 16, 2015 by predominantlypaleo 7 Comments

Welp, it’s still hotter than Hades here without A/C but I love y’all THIIIIIIIIIS much that I decided to make you a treat. It surely won’t make my house cool down but if it brings a few smiles then what the hey!? I asked y’all if you wanted crepes or brownies and although I was…

Self-Care Tips For Autoimmune Flares

June 9, 2015 by predominantlypaleo 8 Comments

If you are managing autoimmune disease like I am, you can almost put your finger on what will bring on a flare and when it might hit. No, it’s not an exact science but once you get to know your body and its triggers, you can basically forecast what lies ahead. So why can’t we prevent…

Tips for Transitioning Kids to Paleo

May 11, 2015 by predominantlypaleo 14 Comments

When I was first diagnosed with Hashimoto’s in 2008, my son was 17 months old and my daughter was 5 months. My 3rd baby had not yet been born. At the time I REALLY wanted to avoid going on meds for life (in 2009 I ended up on natural desiccated thyroid) and so I researched…

CREAMED SPINACH {Vegan/Paleo}

March 17, 2015 by predominantlypaleo 6 Comments

I learned something new on this St. Patrick’s day from a reader. Apparently it is customary to wish someone EITHER a Happy St. Patrick’s Day OR Happy St. Paddy’s Day. But did you know Happy St. Patty’s Day is a no go?! Now my maiden name is Bailey so you’d think I would have heard…

About

Jennifer is a wife and mother of 3 in pursuit of better health for her family.
After being gluten free for 4 years, and having a multitude of chronic health issues, she realized there was still too much processed “food” in her pantry and change was needed. Jennifer began feeding her family more meals from WHOLE foods and less from boxes. Her recipes are predominantly paleo, meaning they are free of grain, gluten, dairy, and refined sugar, but make allowances for a few treats and sweets. She believes food can be medicine when used appropriately and that a few changes now can equate to huge benefits later. Healthy food does not need to be flavorless and void of personality, which she aims to accomplish through her many recipes.
