Protein Rich Crustless Quiche

January 26, 2023 By predominantlypaleo 2 Comments

When I tell you that this Protein Rich Crustless Quiche might be one of my new favorite meals for any time of day, I mean it! Savory and filling plus 16 grams of protein in one slice! I know I know, everything's about protein right now with my recipes. But y'all, I'm really trying not to shrivel up and I am learning so much about how vital protein is for an aging body so I'm all in! If you … [Read More...]

Dairy Free Creamy Mushroom Soup

Dairy Free Creamy Mushroom Soup I have always said I would love opening a soup shop – a lunch spot with daily offerings where lovers of soup can unite and dine! I would have a set number of soups made each day and once they are served, they are gone for the day. I’d love…

‘Lala’ Truffles

‘Lala’ Truffles These are a combination between Lara bars, truffles, girl scout samoa cookies, and the best healthy food you ever ate! Thanks to my mom, the girl scouts, and the price of Lara bars for the inspiration. My kids were literally fighting over them as quickly as i could roll them and the batch…

fun friday: bacon wrapped hot dogs on a stick

by friday evenings, i am admittedly a little lazier in the kitchen.  for awhile we did friday pizza night and splurged on gluten free pizzas – either homemade or delivered. however, in trying to phase dairy out of the house, i realized we needed another fun friday meal. voila! serve with my simply sweet potato chips or…

haricots vert (aka family’s favorite green beans)

i used to buy one bag of these skinny green beans when i went to the store and inevitably ran out every time i made them.  they are good enough to make a two-year-old climb across the table to steal them off my plate…true story. so i started buying TWO batches in order to accommodate…

Naturally “Not-tella” (Homemade Chocolate Hazelnut Spread)

We all love Nutella, let’s admit! But when the first ingredient is sugar and the last is vanillin (artificial vanilla flavor derived from processed wood pulp), it’s not exactly health food.  I tried convincing myself it just had a few ingredients but really, I was a liar. To myself. And as much as my kids…

seared scallops with orange soy glaze

by now you know that ‘simple’ and ‘kid-approved’ are two of my magic words when it comes to what is blog-worthy.  and without following a true rotation diet, i do try to alternate foods for our evening meals as to provide a variety of animal proteins and veggies.  this hit the spot and kept my…

Homemade Chicken Broth

Lucky for us there are plenty of choices for organic broths these days.  However, if you want to make your own, it is cost effective, simple, and much more nutrient dense.  I like to make my bone broth after making this rotisserie crockpot chicken. You can freeze or use within 5-6 days refrigerated and is perfect…

Paleo Coconut Flour Pancakes

Paleo Coconut Flour Pancakes While I often prefer the texture of almond flour for baking, I think it is good to alternate and use a variety as to not develop sensitivities to frequently eaten foods. If you are trying to avoid almond flour and grain based flours, these Paleo Coconut Flour Pancakes are a great alternative served…

Grain Free Meatballs + Sauce

One of my favorite go-to meals in the ‘old’ days was throwing frozen meatballs into a crockpot with grape jelly and chili sauce. Tasty. Easy. And filled with so much crap i don’t even know where to begin. So my task this week was recreating that delicious (awful) meal while making it more paleo friendly…

Bacon Wrapped Sweet Potato Fries {Paleo, AIP)

This is one of those recipes which is so basic yet so dynamite! And furthermore earns a lot of brownie points with both adults and children.  I love making these for appetizers for our family and also for guests. Nobody knows how crazy easy they are.  Well, until now. Looks like the secret’s out! Bacon…

Crockpot Spaghetti Sauce

Crockpot Spaghetti Sauce While I am pretty sure canned tomatoes are not ‘paleo’, they are mom and crockpot friendly, and in my opinion, a necessary evil on occasion.  I love this pasta sauce because after browning the meat, you literally throw everything into the crockpot and have a delicious hearty sauce after a few hours….

Rotisserie Crockpot Chicken

‘Rotisserie’ Crockpot Chicken

‘Rotisserie’ Crockpot Chicken is quite possibly the worlds easiest recipe, short of scooping almond butter onto a spoon… I believe this may be the easiest recipe ever in the universe, possibly requiring fewer steps than a PB&J. The best part is you can extend your dollar and make hearty, healing bone broth when you are done…

About

Jennifer is a wife and mother of 3 in pursuit of better health for her family.
After being gluten free for 4 years, and having a multitude of chronic health issues, she realized there was still too much processed “food” in her pantry and change was needed. Jennifer began feeding her family more meals from WHOLE foods and less from boxes. Her recipes are predominantly paleo, meaning they are free of grain, gluten, dairy, and refined sugar, but make allowances for a few treats and sweets. She believes food can be medicine when used appropriately and that a few changes now can equate to huge benefits later. Healthy food does not need to be flavorless and void of personality, which she aims to accomplish through her many recipes.
