Lemon Poppyseed Muffins

You may have noticed how few posts have been happening here lately, but there is a good reason…I. Have. No. Kitchen! But after seeing that I got a few hundred hits today that make me feel like I need to post something and stat! So without further ado, here is a lil somethin’ I baked up in the toaster oven (which currently resides in my dining room)!

Ingredients:
-1/3 cup palm shortening
-3 tablespoons coconut flour
-1 cup swerve brand sweetener
-3/4 cup coconut or almond milk
-1/4 cup lemon juice
-1 teaspoon vanilla extract
-3 cups almond flour blanched
-1 teaspoon baking soda
-1/4 teaspoon sea salt
-5 large eggs
-2 tablespoons poppy seeds
-1 tablespoon grated lemon zest

1. Preheat oven (or toaster oven!) to 325
2. Grease muffin tins (i used heart shaped silicone tins)
3. Place first 9 ingredients in vitamix (or food processor) and combine well
4. Add eggs, one at a time, blending in between until incorporated
5. Stir the poppy seeds and zest by hand
6. Pour the batter into muffin tins and bake for 25 minutes or until toothpick comes out clean after insertion into center
7. Let muffins cool before carefully removing from tins. i used a spoon to loosen from sides before removing.

Her recipes are predominantly paleo, meaning they are free of grain, gluten, dairy, and refined sugar, but make allowances for a few treats and sweets. She believes food can be medicine when used appropriately and that a few changes now can equate to huge benefits later. Healthy food does not need to be flavorless and void of personality, which she aims to accomplish through her many recipes.
