Protein Packed Peanut Butter Pudding

Hear me out… cottage cheese, but make it dessert with this Protein Packed Peanut Butter Pudding!


I know, cottage cheese is having a moment which makes this recipe sort of annoying, but at the same time, it’s still pretty bada$$ so let’s just approach it with healthy curiosity instead of judgment. Deal? I have really, REALLY been trying to pay attention to my protein intake, NOT because I’m a fitness goddess (that actually made me chuckle to even type), but because my body has told me it feels really good when I make sure it’s protein-packed. So why not share some of my ideas with you all right?

Let’s also address that cottage cheese is not for everyone. I personally love it – texture and all. But even with this pureed version, not everyone will get into it so you can easily sub unflavored Greek yogurt. Need nondairy? The grocery has those too. Let’s just say compared to 2007 when I gave up gluten, almost all things are possible now, which makes dietary alterations a whole lot easier. Same can be said for the PB in this. Can’t have legumes? Try almond butter. Or even sub sunbutter…options options honey.

What I love about this recipe is that it is a dessert option with protein. Because yes I love ice cream but there is not really much about it that loves me back. In fact, just a few years ago it was almost guaranteed that if I had a scoop of the real deal, I would wake up with vertigo or a migraine or both. Because that heavy cream + sugar combo was a deal breaker for my neuro symptoms. But cottage cheese? Now that is a feel good situation and so making it sweet and treaty is just a bonus for my taste buds and my body.

Ingredients

Scale
  • 6 oz cottage cheese
  • 2 tablespoons unsweetened peanut butter (or nut/seed butter of your choice)
  • Splash of sweetener (I used stevia)
  • Low/no sugar chocolate chips

Instructions

  1. Puree nut butter and cottage cheese
  2. Add sweetener if desired
  3. Top with chocolate chips or nuts
