Nope it’s not even a little bit paleo BUT this Gluten Free Chicken Sausage and Roasted Corn Chowder is sure to please everyone else with tastebuds!

If you’ve seen the latest (and most ridiculous) dramz around my FREE recipe creations, you know that I was advised to “consult the paleo gurus” in order to learn what paleo actually means because I posted a recipe that contained both cottage cheese AND peanut butter. Sinners gonna sin I suppose and if that’s the worst thing I do in any given month then I reckon I’m doing alright.

There was a time, like literally a full decade ago, when I wrote recipes that were strictly without dairy, grain, or refined sugar – because I needed to be adherent to work on healing a very sick body. And over the years it definitely helped, but it wasn’t the end all be all to my healing. Add to that, my blog name, Predominantly Paleo, was curated with care and caution because I always wanted to allow wiggle room away from militant and potentially disordered eating. And even 10 years ago, I knew that was something I wanted and needed to do, for myself and others.

And still, even with over 400 strictly paleo recipes on this website, paid for and maintained solely by me, I still get the occasional grinch who wants to really hand me my a$$ and tell me how I’m doing it all wrong and how to fix that. This last time I decided to have some fun with it, so if you played along while I was on vacation in the Keys, declaring everything as “paleo” (including the rosé truck parked on the beach), thank you for showing out. That was a blast. But seriously, if you need to be strict, be strict. But please for the love of everything in the prehistoric area, learn what PREDOMINANTLY means so we can both save ourselves a migraine. In the meantime, check out this very unholy chowder that is beyond delicious.
PrintGluten Free Chicken Sausage and Roasted Corn Chowder
Ingredients
- 5 chicken sausages (I used Unexpected Cheddar sausages from Trader Joes)
- 1 can Rotel, drained
- 1/4 cup uncooked rice
- 2 cups roasted corn (I found this in the freezer section of Trader Joe’s)
- 32 ounces chicken or beef broth
- 1 teaspoon sea salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon onion powder
- 1/2 teaspoon garlic powder
- 1/2 cup cream cheese (can use dairy free)
- 1/2 cup sour cream (can use dairy free)
- 1 tablespoon cassava flour
- Fresh chives
Instructions
- Saute chicken sausages and add corn, rotel, rice, seasonings, and broth
- Pressure cook for 8 minutes on high and quick release pressure valve once complete
- Add in sour cream and cream cheese
- Ladle out 1/4 cup of soup and add in the cassava flour
- Add the slurry back in and stir until thickened
- Serve and top with fresh chives
This was delicious! I used chicken breast and some andouille sausage. Then added lowfat greek yogurt instead of the sour cream. Topped with avocado, shredded cheese and few tortilla chips. My family loved it!
