Garlic Butter Sweet Potato Noodles

I can live without noodles, I really can.  Even the littles can live without noodles. But no denying, noodles are nice! This dish satisfies the need for noodles, veggies, main course, side dish, you name it. It’s a feel good meal you can make as is or even top with my crockpot spaghetti sauce for a hearty nutrient packed dish.

Ingredients:

  • 1 sweet potato
  • 1 head broccoli (chopped finely, florets only)
  • 1 onion diced finely
  • 2-3 tablespoons Paleo butter (or grassfed or ghee)
  • Garlic salt to taste
  1. Peel sweet potato and spiralize (i got mine here amazon.com)
  2. Heat butter over medium heat and add sweet potato and diced onion
  3. Cook until noodles are cooked but not flimsy and season with garlic salt
  4. While noodles are cooking, steam broccoli
  5. Toss together and serve right away (should make about 4 cups total)

Jennifer is a wife and mother of 3 in pursuit of better health for her family.

She believes food can be medicine when used appropriately and that a few changes now can equate to huge benefits later. Healthy food does not need to be flavorless and void of personality, which she aims to accomplish through her many recipes.
