Gluten Free French Toast Quiche

August 16, 2023 By predominantlypaleo Leave a Comment

A non-savory quiche that's also not sweet enough to be called a pie? That's my new Gluten Free French Toast Quiche with added protein! The minute I go calling this a quiche, there will be an instant rumble in the air, like a brewing storm, until finally a few brave souls erupt with "Everyone knows quiche is savory." And so it will begin as it has a thousand times before. People on the … [Read More...]

Coconut Macaroon Pie Crust

In the passover section at the grocery store each year, there is a delicious coconut macaroon pie crust.  I’ve purchased it before, celebrating in all of its gluten free glory. Unfortunately as many of us have learned, gluten free does not equal healthy. There is a whole lotta sugar in this treat, and so it’s…

Paleo Shamrock Shake

Have you seriously looked at what’s in a Shamrock Shake? I mean I know it’s not supposed to be health food and all, coming from a fast food joint, but eeks! That’s some scary business right there. Luckily if you happen to be a fan of the minty treat, here is a stand in that…

Paleo Lasagna

The World’s Best Ever Magical Paleo Lasagna

Ok, so maybe it hasn’t quite won these accolades, but, I can assure you that this was pretty much out of control good. I never could imagine that lasagna could be edible if you took out the two most important ingredients: noodles and cheese.  But alas, not only was The World’s Best Ever Magical Paleo…

breakfast casserole

i am a big fan of one pot meals, be it crockpot, casserole, or stockpot.  i find it rather satisfying to be able to throw all the ingredients into one spot and in the end have a perfect balance of veggies and protein.  this casserole can be made ahead and refrigerated or made the morning…

Garlic Cilantro Vinaigrette

Garlic Cilantro Vinaigrette Apparently I am craving spring like crazy, wanting fresh salads and tart vinaigrettes.  Well it seems we have a few more weeks of winter, ice, and snow, but i refuse to wait.  This vinaigrette is really pretty amazing and took 5 minutes to make! I absolutely love garlic and cilantro. I know…

Paleo “Peanot” Butter Cups

Paleo “Peanot” Butter Cups Look it’s more chocolate! Except this time there is a special treat inside.  These are copycat peanut butter cups but without peanuts, dairy, PGPR (huh?), or TBHQ (wha?). Oh and guess what? They are quick and simple too. I think it’s crazy that we are expected to trust what’s on supermarket shelves when…

paleo onion loaf

oh man, i hit the motherload today.  i actually started imagining this as i was falling asleep last night and i am so so glad i remembered it upon waking this morning.  i do not typically make fried onions before 11am but i had to make an exception indeed. (note: you will need a spiralizer…

Paleo Chicken Lettuce Wraps

Paleo Chicken Lettuce Wraps Chinese food is tricky when it comes to eating grain free, because even wheat free tamari (soy sauce) is still soy based.  Bummer! This recipe uses coconut aminos and is a really great stand-in when soy is out! Ingredients: For filling: 2 pounds ground chicken 2 tablespoons avocado oil 1 large…

onion jam

i am a die hard fan of onions, so much so that i cook with them daily. i do not need to be convinced that onions are a gift from the heavens but if you do, this might be the ticket.  this onion jam is the perfect condiment for my beet fritters, although i might be…

beet fritters (with onion jam)

don’t even ask where this idea came from…i found beets at my local organic market and thought i needed to figure out a way to make them, besides borscht, which my grandmother adored.  well everyone in my house adores potato pancakes so i wondered if there was a way to make beet “pancakes” without them…

Double Chocolate Avocado Cookies

Double Chocolate Avocado Cookies I gotta admit, this was not my idea, but when a friend sent me photos of her version of these, I figured I had to give it a go.  I always try to keep sweeteners to a minimum, so this only uses 1/4 cup of maple syrup for the whole baker’s…

sweet potato popovers

popovers are definitely part of a glutenous culture and sort of tricky to reproduce from their white flour, dairy butter based origins.  these are pretty stinkin’ good with the a crispy outside and soft airy inside, with just a hint of sweet potato! ingredients: 4 free range eggs 1/4 cup avocado oil 1/2 large sweet…

lemon chia truffles

i recently had an organic grain free clif bar that was pretty darn good.  it was lemony but not overwhelmingly so and had chia seeds, pumpkin seeds, and some other goodies.  like my lala truffles, these are easy, inexpensive and packed with great ingredients! ingredients: 1 cup pitted dates 1/4 cup chia seeds 1/4 cup pumpkin…

Chicken Pot Pie ala Paleo (revised)

When I first gave up grain I started thinking about all the delicious food i would be missing.  I felt sorry for myself for about 4.7 seconds and then realized that if I wanted to feel better, heal better, and eat better, change was needed.  Chicken pot pie is a childhood favorite that should never…

About

Jennifer is a wife and mother of 3 in pursuit of better health for her family.
After being gluten free for 4 years, and having a multitude of chronic health issues, she realized there was still too much processed “food” in her pantry and change was needed. Jennifer began feeding her family more meals from WHOLE foods and less from boxes. Her recipes are predominantly paleo, meaning they are free of grain, gluten, dairy, and refined sugar, but make allowances for a few treats and sweets. She believes food can be medicine when used appropriately and that a few changes now can equate to huge benefits later. Healthy food does not need to be flavorless and void of personality, which she aims to accomplish through her many recipes.
