May 2, 2023 By predominantlypaleo Leave a Comment

Filling and hearty in 10 minutes - you cannot beat the ease of this Instant Pot Sausage and Rice! Did you see? I had awake surgery! I know it's a little wild what we are capable of doing these days and recovering from - but yes, I had a breast lift/reduction while totally alert and awake. So yes, this was an elective and cosmetic procedure and I know people have all sorts of feelings about … [Read More...]

Paleo French Toast

Paleo French Toast Grain free, dairy free french toast?!!? Say it isn’t so.  Well, it IS so! So good that is.  I worked hard to develop several recipes for paleo bread which I felt could embody the texture and flavor of some of our old favorites. In addition to those, I’ve also since launched Legit…

Dairy Free Paleo Butter

Dairy Free Paleo Butter I am a recovering butter addict. Grass fed creamy delicious butter was on or in just about everything I made. When I found out that I had to ditch dairy I was pretty bummed and have missed it since.  I *cheat* with vegan butter sometimes, but it has less desired vegetable…

Chicken Meatballs in Onion Broth (with veggies)

Soup is one of those meals for me that is filling and satisfying yet is also emotionally comforting. The season doesn’t matter, nor the weather really, although outdoor dampness can definitely spike the urge! This soup was inspired by a need for something a little lighter as the transition from winter to spring takes shape….

Dairy Free Ranch Dressing

Dairy Free Ranch Dressing Let me tell y’all what…if there is a quintessential condiment of Texas, it’s Ranch Dressing.  creamy, tangy, zesty ranch. dip, pour, drench, drizzle – any way you look at it.  Ranch is boss. The main thing people don’t realize is it’s for everything! It’s for pizza, it’s for burgers, it’s for…

Choc-o-Bacon (Chocolate Covered Bacon)

Choc-o-Bacon (Chocolate Covered Bacon) OUT.OF.CONTROL. there is really not much to say about this. bake it, dip it, die for it. the end. People will talk trash, they’ll try to make you feel insecure about your food choices. And then it happens. Those suckers fall for the good stuff and literally eat their words.  shared…

Cilantro Garlic Mahi Mahi

Cilantro Garlic Mahi Mahi   We heart cilantro in this house. We like it in salsa, we like it as a garnish, we just like it. Period. And fish is a great light meal that doesn’t have to be complex. The weather is warming and meals around here will become increasingly lighter. We still enjoy…

Grain Free Paleo Bread

This recipe took 2 tries to perfect. my little taste testers were pleased enough the first time around, but i wasn’t.  so today i gave it another go after thinking on it a bit.  i had originally aimed for a nut free recipe, and it still may happen, but for now this had the best…

….A Few of My Favorite Things

Most of the questions I seem to get are 1) what is that 2) where do i get that and 3) can you ship that to me? Well, iI can’t help too much with number 3, but I can hopefully help by posting some kitchen staples and where I find them. All Numbered Titles are…

Paleo Chocolate Pie with Coconut Macaroon Crust

Icebox pie brings back lots of memories of my grandmother. She loved her treats and made many of them homemade. These days, it seems we satisfy our cravings more with store bought treats which desperately lack any sort of nutritional foundation. I say, make dessert healthy! Creamy and thick yet not immensely heavy like those…

Coconut Macaroon Pie Crust

In the passover section at the grocery store each year, there is a delicious coconut macaroon pie crust.  I’ve purchased it before, celebrating in all of its gluten free glory. Unfortunately as many of us have learned, gluten free does not equal healthy. There is a whole lotta sugar in this treat, and so it’s…

Paleo Shamrock Shake

Have you seriously looked at what’s in a Shamrock Shake? I mean I know it’s not supposed to be health food and all, coming from a fast food joint, but eeks! That’s some scary business right there. Luckily if you happen to be a fan of the minty treat, here is a stand in that…

Paleo Lasagna

The World’s Best Ever Magical Paleo Lasagna

Ok, so maybe it hasn’t quite won these accolades, but, I can assure you that this was pretty much out of control good. I never could imagine that lasagna could be edible if you took out the two most important ingredients: noodles and cheese.  But alas, not only was The World’s Best Ever Magical Paleo…

breakfast casserole

i am a big fan of one pot meals, be it crockpot, casserole, or stockpot.  i find it rather satisfying to be able to throw all the ingredients into one spot and in the end have a perfect balance of veggies and protein.  this casserole can be made ahead and refrigerated or made the morning…

About

Jennifer is a wife and mother of 3 in pursuit of better health for her family.
After being gluten free for 4 years, and having a multitude of chronic health issues, she realized there was still too much processed “food” in her pantry and change was needed. Jennifer began feeding her family more meals from WHOLE foods and less from boxes. Her recipes are predominantly paleo, meaning they are free of grain, gluten, dairy, and refined sugar, but make allowances for a few treats and sweets. She believes food can be medicine when used appropriately and that a few changes now can equate to huge benefits later. Healthy food does not need to be flavorless and void of personality, which she aims to accomplish through her many recipes.
