Paleo “Peanot” Butter Cups

February 27, 2014 by predominantlypaleo 2 Comments

Paleo “Peanot” Butter Cups

Look it’s more chocolate! Except this time there is a special treat inside.  These are copycat peanut butter cups but without peanuts, dairy, PGPR (huh?), or TBHQ (wha?). Oh and guess what? They are quick and simple too.

I think it’s crazy that we are expected to trust what’s on supermarket shelves when we can’t even pronounce the ingredients! Especially as a mom, I get a little squeamish and REALLY apprehensive when my kids show me treats they are interested in off shelves.

I’m not saying you have to be militant and thank goodness there are some healthier, cleaner options out there right now to purchase out of convenience sake, but sheesh! Sometimes you just have to make your own to know that we do hold the power, we can vote with our dollar, and sometimes homemade tastes that much better!

    Ingredients

    Scale
    • 1 bag dairy and soy free chocolate chips
    • 1 tablespoon coconut oil
    • 2–3 tablespoons Sunflower Seed Butter
    • 1 candy mold

    Instructions

    1. Melt chocolate chips and coconut oil in saucepan over low heat until melted
    2. Using a small spoon, fill bottom of each candy mold opening
    3. Next take a small amount of sunbutter and place on top of chocolate in molds
    4. Finish it off with another dollop of melted chocolate, being careful not to overfill
    5. Place mold in freezer for about 20-30 minutes, sometimes less
    6. Remove and flip mold over, candies should come out easily

About

Jennifer is a wife and mother of 3 in pursuit of better health for her family.
After being gluten free for 4 years, and having a multitude of chronic health issues, she realized there was still too much processed “food” in her pantry and change was needed. Jennifer began feeding her family more meals from WHOLE foods and less from boxes. Her recipes are predominantly paleo, meaning they are free of grain, gluten, dairy, and refined sugar, but make allowances for a few treats and sweets. She believes food can be medicine when used appropriately and that a few changes now can equate to huge benefits later. Healthy food does not need to be flavorless and void of personality, which she aims to accomplish through her many recipes.
