paleo onion loaf

oh man, i hit the motherload today.  i actually started imagining this as i was falling asleep last night and i am so so glad i remembered it upon waking this morning.  i do not typically make fried onions before 11am but i had to make an exception indeed. (note: you will need a spiralizer or mandolin)

ingredients:

  • 1 large onion peeled
  • 1/4 cup potato flour
  • 1/4 arrowroot flour
  • 1 teaspoon freshly ground garlic sea salt
  • avocado oil for frying
  • additional plain himalayan salt
  1. spiralize your peeled onion (i use this one)
  2. cover the bottom of a skillet with avocado oil, just a thin layer and heat over medium
  3. on a plate mix the potato and arrowroot flour with the garlic salt
  4. take the spiralized onions and dredge them in the flour mixture
  5. once coated place them in heated skillet and fry until browned on all sides 
  6. remove from skillet and place on towel lined plate to absorb excess oil
  7. sprinkle with additional himalayan salt if desired
  8. serve right away with ketchup, bbq sauce or with just a smile

    I bought a spiralizer a couple of months ago, but I never used it to spiralize onions. I am glad I came across your post, otherwise, I wouldn’t have known that it can be used to spiralize onions. Thanks very much for this!

    Sounds delicious and I know my husband would love this! If I don’t have potato flour (and I am AIP), can I use coconut flour instead? Or finely ground almond flour?

      You could try almond flour! Coconut might work but I can’t really speak for either sub.

Jennifer is a wife and mother of 3 in pursuit of better health for her family.
After being gluten free for 4 years, and having a multitude of chronic health issues, she realized there was still too much processed “food” in her pantry and change was needed. Jennifer began feeding her family more meals from WHOLE foods and less from boxes. Her recipes are predominantly paleo, meaning they are free of grain, gluten, dairy, and refined sugar, but make allowances for a few treats and sweets. She believes food can be medicine when used appropriately and that a few changes now can equate to huge benefits later. Healthy food does not need to be flavorless and void of personality, which she aims to accomplish through her many recipes.
