breakfast casserole

i am a big fan of one pot meals, be it crockpot, casserole, or stockpot.  i find it rather satisfying to be able to throw all the ingredients into one spot and in the end have a perfect balance of veggies and protein.  this casserole can be made ahead and refrigerated or made the morning of if you wish!

ingredients:

  • 6 free range organic eggs
  • 1/2 cup flax milk
  • 1/2 teaspoon parsley
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon sea salt
  • 1/4 teaspoon ground black pepper
  • 1/4 teaspoon garlic powder if desired
  • 6 sausage patties (i use these)
  • 1 grated sweet potato
  • i small onion, diced
  • 1 grated zucchini, with excess moisture removed (or 1 cup chopped spinach leaves)
  • fresh chives
  • a pinch extra sea salt for the top
  • olive oil
  1. preheat oven to 375
  2. now whisk all 6 eggs with flax milk
  3. add chopped onion, shredded zucchini (or spinach), and seasonings to egg mixture
  4. line your casserole dish with frozen sausage patties
  5. next, pour your egg and veggie mixture over the sausage
  6. sprinkle grated sweet potato on top and drizzle with olive oil
  7. sprinkle a little sea salt on top of sweet potatoes
  8. bake for about an hour or until cooked through

    Seeing your first ingredient – flax milk – brought back a vivid memory from my youth. We bought our milk from a local fettler who gained some extra money for his family by running about half a dozen dairy cows. One day the cows got into a local farmer’s linseed [flax] crop and, to cut a long story short, their milk was undrinkable for several days. It tasted of linseed oil .. what we used to use to thin paint!. With all the uses of linseed and flax seed these days, I wonder how that terrible taste is removed from the linseed/flaxseed to make it palatable? Not with lots of chemicals, I trust. Tend to avoid the stuff myself, just in case.

      I am not sure what process is used but you can also make your own at home from flax seeds. I never notice a foul taste personally but your account was very colorful!

    This looks yummy! I’m in a breakfast rut but I do have a question. I’m still new to grated zucchini and “zoodles.” How do you remove excess water from them? Do you just put them in a towel and squeeze them?

      Yes you can squeeze with a towel and that will really help! You can also saute until the water cooks off as well.

      I think maybe an 8×8? It should work in a variety of sizes though!
