onion jam

i am a die hard fan of onions, so much so that i cook with them daily. i do not need to be convinced that onions are a gift from the heavens but if you do, this might be the ticket.  this onion jam is the perfect condiment for my beet fritters, although i might be caught eating it off the spoon.  shhhhhh…

ingredients:

  • 1 large sweet onion diced small
  • 2 tablespoons avocado oil
  • 3 tablespoons coconut palm sugar
  • 1/4 cup white balsamic vinegar
  • salt 
  1. cook diced onions in avocado oil over medium/high heat or until nicely browned (about 15 minutes)
  2. sprinkle coconut palm sugar on top and let onions caramelize for about 5 minutes
  3. now add vinegar and bring to a simmer to cook off the vinegar and help thicken the jam
  4. stir in salt to taste, i used about 1/4 teaspoon for the entire batch

Her recipes are predominantly paleo, meaning they are free of grain, gluten, dairy, and refined sugar, but make allowances for a few treats and sweets. She believes food can be medicine when used appropriately and that a few changes now can equate to huge benefits later. Healthy food does not need to be flavorless and void of personality, which she aims to accomplish through her many recipes.
