i am a die hard fan of onions, so much so that i cook with them daily. i do not need to be convinced that onions are a gift from the heavens but if you do, this might be the ticket. this onion jam is the perfect condiment for my beet fritters, although i might be caught eating it off the spoon. shhhhhh…
ingredients:
- 1 large sweet onion diced small
- 2 tablespoons avocado oil
- 3 tablespoons coconut palm sugar
- 1/4 cup white balsamic vinegar
- salt
- cook diced onions in avocado oil over medium/high heat or until nicely browned (about 15 minutes)
- sprinkle coconut palm sugar on top and let onions caramelize for about 5 minutes
- now add vinegar and bring to a simmer to cook off the vinegar and help thicken the jam
- stir in salt to taste, i used about 1/4 teaspoon for the entire batch
