Instant Pot Hard Boiled Eggs

July 17, 2015 by predominantlypaleo 82 Comments

I really shouldn’t even write an intro for this one – this is seriously barely a recipe. I mean it’s definitely worth posting because who doesn’t want an easier method for hard boiling eggs?! Right? But this is so crazy easy I should just stop. typing. now… Oh but I have to mention that since…

QUESO BLANCO {Paleo/Vegan}

July 8, 2015 by predominantlypaleo 25 Comments

Technically I should call this Anacardos Blancos I think, since it is not “cheese” in the moo-ey sense of the word. But I am sticking with Queso Blanco and here’s why… it is no secret I love cheese. And when I say love I mean I am a cheese stalker. I will seek out cheese…

Paleo Fried Sardines

July 2, 2015 by predominantlypaleo 8 Comments

There’s really not much to say about this recipe but here goes… I needed dinner. I wanted it to be super fast. My chicken was stinky despite an expiration date that indicated it should be good. So I needed a Plan B. I’ve been loving peeling open a can of sardines for a salad at lunch,…

Paleo Fried Chocolate Chip Cookies

June 7, 2015 by predominantlypaleo 3 Comments

Something insane showed up in my news feed the other day that I couldn’t unsee. Deep fried chocolate chip cookie dough. Whaaa?! Now before you call the paleo police, let me be clear about one thing… you ain’t gonna ruffle my feathers. Know why?? Because I am a grown up and am pretty capable of policing…

TERIYAKI CHICKEN WINGS {PALEO}

May 18, 2015 by predominantlypaleo 15 Comments

The other day at the market I passed by the most voluptuous thighs. I imagined sinking my teeth right in and motorboating all that juicy meat. People! Snap out of it, I’m talking chicken thighs here. Well I passed over those beauties when I laid my eyes on the new shipment of pasture raised drumsticks…

Tips for Transitioning Kids to Paleo

May 11, 2015 by predominantlypaleo 14 Comments

When I was first diagnosed with Hashimoto’s in 2008, my son was 17 months old and my daughter was 5 months. My 3rd baby had not yet been born. At the time I REALLY wanted to avoid going on meds for life (in 2009 I ended up on natural desiccated thyroid) and so I researched…

PALEO {INSTANT POT} ITALIAN WEDDING SOUP

February 21, 2015 by predominantlypaleo 41 Comments

I shoveled snow today and didn’t have a heart attack.  Small victories are big ones sometimes. Like a Texan surviving single digits. It’s exciting and depressing all at the same time. Know what else happened today? Unicorn vomit. That’s my nice way of saying, “My 4 year old dumped out millions of sequins onto the…

When Paleo Parents asks you if you want to contribute to a Cheesecake Factory Copycat Roundup, you don’t walk you run….to the KITCHEN!!! Awhile back I asked you lovelies what your favorite Cheesecake Factory dishes were and there were literally so many there was no way to even tally a vote. I contemplated doing the…

Paleo Cheese {Dairy/Nut Free}

February 17, 2015 by predominantlypaleo 31 Comments

Paleo Cheese?! Are you kidding me? Ok but before we get to that…. My obsession with cheese is not really a secret. I’ve said it before and I’ll say it again – I love the stuff, in a very unhealthy addicted sort of way. And I had to give it up. If you haven’t read…

About

Jennifer is a wife and mother of 3 in pursuit of better health for her family.
After being gluten free for 4 years, and having a multitude of chronic health issues, she realized there was still too much processed “food” in her pantry and change was needed. Jennifer began feeding her family more meals from WHOLE foods and less from boxes. Her recipes are predominantly paleo, meaning they are free of grain, gluten, dairy, and refined sugar, but make allowances for a few treats and sweets. She believes food can be medicine when used appropriately and that a few changes now can equate to huge benefits later. Healthy food does not need to be flavorless and void of personality, which she aims to accomplish through her many recipes.
