Paleo Carnitas on Yuca Cakes

May 28, 2014 by predominantlypaleo 13 Comments

Paleo Carnitas

AIP OR Autoimmune Paleo is an even more strict version of the grain and dairy free paleo lifestyle many have grown to love. It takes away nuts, seeds, eggs, chocolate, and nightshades, among other things.  It can be especially tough to adjust to all of these omissions after a lifetime of indulging. My hope in…

Paleo Hot Dog Buns {Nut Free}

Paleo Hot Dog Buns

This was an eventful day in the kitchen! I made a delicious Strawberry Shortcake, I revamped some Stuffed Mushrooms, and I made these delicious Paleo Hot Dog Buns from my Sweet Poato Bun recipe. I hesitated making this a “new” recipe, because it really isn’t – but to make it a little simpler for following directions,…

Paleo Caramel Apple Tartlets

Caramel Apple Tartlet

OK, can I be honest for a minute? I have never been a huge fruity dessert person. I mean, I can do fruit, fruit is good…ALONE. But dessert = chocolate. It just is, right?? Maybe it is genetic, I dunno. My mom taught me that chocolate was what dessert is made of, so that’s where…

Paleo Maple Pecan Sausage Balls

Maple Pecan Sausage Balls

Growing up almost every grown-up party my parents dragged me to had a giant plate of those tasty lil sausage balls. You know the ones – with the Bisquick and cheddar cheese? Man, they are good. So good that I could stand by that plate all evening and stuff my face, popping in one after…

Mom’s Favorite Coffee – ICED Edition {Vegan/Paleo}

May 17, 2014 by predominantlypaleo 5 Comments

It’s warming up in a big way and iced coffee is becoming a “thing” quickly. I will always enjoy my one cup of Mom’s Favorite Coffee each morning, even when warm turns into sweltering, but the afternoons are a different story.  I love spending time outside with my kids on the summer days but the…

Paleo Pop Tarts {AIP/Nut Free/Egg Free}

May 15, 2014 by predominantlypaleo 29 Comments

Sometimes I want to be 5 years old again and truthfully I  don’t think there is anything wrong with that. I mean think about it – your biggest dilemma is which gifts you want to ask for for your birthday, your biggest woe is choosing between 8 best friends, and your biggest responsibility is trying to get your dirty…

5 Ingredient Grain Free Flatbread {Paleo/Nut-free}

May 9, 2014 by predominantlypaleo 21 Comments

Bottom line in the land of healthy eating – people want food that tastes good. The. End. And if those people are coming off of eating a Standard American Diet, then things like bread, pasta, desserts, and fried foods are in the priority. We are a carb, sugar, fat loving nation and to transition away…

Paleo Egg Rolls {Nut free/AIP}

Paleo Egg Rolls

Egg Rolls have always been my Chinese-American go to finger food. I mean, there is really nothing NOT to love about them. They are fried, filled with the perfect blend of meat, veggies, and seasoning, and they are fried. Oh, and they are fried! I love them dipped in sweet and sour sauce, soy sauce,…

Cilantro Watermelon Salad

May 5, 2014 by predominantlypaleo 3 Comments

I have always claimed that sweet and savory did not belong together. I would pick fruit out of salads and turn my nose up at sophisticated pairings. Then something happened – I started eating real food. And slowly after gaining more of an appreciation for organic, pure, chemical free foods, these pairings started to become more…

About

Jennifer is a wife and mother of 3 in pursuit of better health for her family.
After being gluten free for 4 years, and having a multitude of chronic health issues, she realized there was still too much processed “food” in her pantry and change was needed. Jennifer began feeding her family more meals from WHOLE foods and less from boxes. Her recipes are predominantly paleo, meaning they are free of grain, gluten, dairy, and refined sugar, but make allowances for a few treats and sweets. She believes food can be medicine when used appropriately and that a few changes now can equate to huge benefits later. Healthy food does not need to be flavorless and void of personality, which she aims to accomplish through her many recipes.
