Choc-o-Bacon (Chocolate Covered Bacon)

OUT.OF.CONTROL. there is really not much to say about this. bake it, dip it, die for it. the end.

People will talk trash, they’ll try to make you feel insecure about your food choices. And then it happens. Those suckers fall for the good stuff and literally eat their words.

    Ingredients

    Scale
    • 1 package organic bacon
    • 1/2 cup vegan chocolate chips (i use enjoy life)
    • 1 tablespoon coconut oil
    • optional: turbinado sugar crystals

    Instructions

    1. preheat oven to 375
    2. open package of bacon and take out one piece at a time
    3. fold single slice of bacon in half and lay on foil lined baking sheet
    4. repeat until entire package is folded and on baking sheet
    5. bake for 10 minutes then flip bacon slices over
    6. bake for another 5-10 minutes or until bacon is nice and crispy but not burned
    7. remove from oven and place bacon slices onto towel lined plate to remove excess grease
    8. while bacon is cooking, melt 1/2 cup chocolate chips with 1 tablespoon coconut oil
    9. stir until there are no lumps
    10. once bacon is cool dip into chocolate, making sure both sides are well submerged
    11. place on parchment paper to cool, i put mine in refrigerator to help chocolate solidify more quickly
    12. optional:  you can sprinkle a few turbinado sugar crystals if you want a little extra crunch and a fun look

Jennifer is a wife and mother of 3 in pursuit of better health for her family.
After being gluten free for 4 years, and having a multitude of chronic health issues, she realized there was still too much processed “food” in her pantry and change was needed. Jennifer began feeding her family more meals from WHOLE foods and less from boxes. Her recipes are predominantly paleo, meaning they are free of grain, gluten, dairy, and refined sugar, but make allowances for a few treats and sweets. She believes food can be medicine when used appropriately and that a few changes now can equate to huge benefits later. Healthy food does not need to be flavorless and void of personality, which she aims to accomplish through her many recipes.
