Protein Rich Crustless Quiche

January 26, 2023 By predominantlypaleo 2 Comments

When I tell you that this Protein Rich Crustless Quiche might be one of my new favorite meals for any time of day, I mean it! Savory and filling plus 16 grams of protein in one slice! I know I know, everything's about protein right now with my recipes. But y'all, I'm really trying not to shrivel up and I am learning so much about how vital protein is for an aging body so I'm all in! If you … [Read More...]

Virgin Mojito

Truth be told, I am not a big drinker. Between illness and just wanting to feel sharp and energized, I discovered that libations and I are not BFFs. In the land of Paleo, some indulge and some don’t – there is no steadfast rule. But since my personal Paleo county is dry, I thought it…

Paleo Shepherd’s Pie {Grain/Dairy Free, AIP option}

Paleo Shepherd’s Pie {Grain/Dairy Free, AIP option} Growing up, my dad would channel his Irish roots and make his version of Shepherd’s Pie almost weekly. It was certainly edible though looking back I giggle at our family’s “healthy” rendition. See, my dad has for many years been a Vegetarian and this pie, affectionately referred to…

Juicy Cubes

I am a big fan of water, meaning I drink a lot of it. Do I love water? I do not. It bores me. I favor bubbly water the most because it at least has some kick but I sure wish it had more personality. This idea came to me today as I walked through…

Maple Sunflower Seed Butter

Sunflower Seed Butter (or sometimes known as sunbutter) is a fabulous replacement for peanut or almond butter for those who cannot eat nuts.  I typically keep store bought on hand for an easy go-to snack, but homemade is extremely simple, more cost effective, and you can flavor it how you like. This recipe literally came…

Date-Sweetened BBQ Sauce

BBQ sauce is as inherent to Texas as Tex-Mex is. And truth be told, BBQ sauce isn’t just a condiment, it is a pure reflection of the personality consuming it. There are sauces that can be based on honey, tomato, molasses, smoky, spicy, pepper, tangy, mustard, and on and on.  And with each sauce comes a…

Garlic Chive Green Beans

Garlic Chive Green Beans Oh man, I got a little caught up in the chocolate craze there for awhile. I mean I take full responsibility and all but my recipe-writing is back on track. For the record, I have not tried to actually live off chocolate for weeks at a time, but I bet you…

Paleo Empanadas

Paleo Empanadas

I hate to brag, but can I? Okay, okay, I’ll hush up. But seriously, can I at least say that my pickypants Mister said these ranked up there with “the best of the best”? That is kind of major, because he is sort of, um, how do you say…”particular”? I mean I love the guy,…

Easter Candy Swap Out

Easter Candy Swap Out It’s another holiday and another reason to pour bleached white sugar (by the truckload) down our gourds. Is it really necessary? I mean I’m not a total party pooper, I get it. Celebrations, holidays, birthdays, all reasons for treats. But in reality it all translates into “Eat Junk, Feel Like Junk”…

Paleo Almond Delights (like Almond Joy)

Paleo Almond Delights (like Almond Joy) “Sometimes you feel like a nut”…yep that sounds about right. In fact I’d say most of the time I feel like one, with all interpretations taken into account. Remember that catch phrase? Well whether you recall or not, Almond Joys have been a favorite sinful pastime for many years….

Paleo/Vegan Chocolate Chip Cookies {Nut/Egg Free}

I mean how hard is it to avoid all the food allergens and individual issues and STILL have a yummy treat? Those of us with “ISSUES” still deserve to nosh on something delicious, don’t you think? Well I want everyone to have a chocolate chip cookie they can chow on without worry, and THIS is…

Egg Free Paleo Bread Loaf

Egg Free Paleo Bread Loaf I get so many different requests for specific allergen recipes. While it is not possible (with either time or money) to make every variation of every recipe, I do take these requests to heart. I have many followers from both the LYME and AUTISTIC communities who try to use these…

Baked Paleo Tortillas {Grain free, Nut free, Vegan}

It’s TEX-MEX time! When I asked all you lovely friends what you wanted to see more of, TEX-MEX was ranked up there with requests for world peace and 75 degree days year round. Clearly I am not equipped to facilitate the latter two but TEX-MEX, this girl can do! I have mentioned before that I…

Chocolate Covered Cheesecake Bites

Chocolate Covered Cheesecake Bites After my mini-meltdown yesterday I knew I was going to have to pour my heart into something delicious! Have you ever seen “Like Water for Chocolate”? Despite my attention deficit with subtitled movies, I found myself captivated. I loved how she poured so much emotion into her cooking and since then,…

Rainbow Salad

Rainbow Salad    The sun is shining and I am feeling inspired. Isn’t it funny how weather changes can really cast a spell on your food cravings? Luckily bacon has a four season foundation so there is no concern to be had there. But I digress.      Winter here has been long, and cold….

About

Jennifer is a wife and mother of 3 in pursuit of better health for her family.
After being gluten free for 4 years, and having a multitude of chronic health issues, she realized there was still too much processed “food” in her pantry and change was needed. Jennifer began feeding her family more meals from WHOLE foods and less from boxes. Her recipes are predominantly paleo, meaning they are free of grain, gluten, dairy, and refined sugar, but make allowances for a few treats and sweets. She believes food can be medicine when used appropriately and that a few changes now can equate to huge benefits later. Healthy food does not need to be flavorless and void of personality, which she aims to accomplish through her many recipes.
