Cilantro Garlic Mahi Mahi

 


We heart cilantro in this house. We like it in salsa, we like it as a garnish, we just like it. Period. And fish is a great light meal that doesn’t have to be complex. The weather is warming and meals around here will become increasingly lighter.

We still enjoy rotating a variety of dishes but fish is perfect for longer, sunnier days.  This one literally gets tossed into the oven to baked covered with a delicious sauce that takes only minutes to assemble.

Did you know that cilantro also has other helpful qualities like pulling out heavy metals in your body?! It’s true! With all of our toxic exposures these days, even with personal care products like lipstick, heavy metal exposure is no joke. So not only does this taste amazing, it’s also helping contribute to a healthier you on the back end!

    Cilantro Garlic Mahi Mahi

    Ingredients

    Scale
    • 5 mahi mahi fillets (i used frozen and partially defrosted)
    • 4 garlic cloves
    • 1 tablespoon coconut aminos
    • 1/3 cup chicken broth plus 2 tablespoons
    • 2 tablespoons avocado oil
    • 2/3 cup cilantro leaves
    • 1/2 teaspoon himalayan salt (or more if desired)
    • 1/2 teaspoon onion powder
    • 1/4 teaspoon fresh cracked pepper
    • Oil for greasing baking pan

    Instructions

    1. Preheat oven to 375
    2. Grease baking pan and place fish fillets into pan
    3. Now take all remaining ingredients and blend (I used Nutribullet) until a green puree is formed
    4. Pour over fish
    5. Bake for 20-25 minutes or until fish flakes and is cooked through

    This recipe is delicious! I am no lover of cilantro, but man, I loved this recipe! I made it for my boyfriend last night, and he keeps raving about it! Not easy to hear from him when it comes to food…so for both… WHAT A TREAT!

She believes food can be medicine when used appropriately and that a few changes now can equate to huge benefits later. Healthy food does not need to be flavorless and void of personality, which she aims to accomplish through her many recipes.
