Virgin Mojito

Truth be told, I am not a big drinker. Between illness and just wanting to feel sharp and energized, I discovered that libations and I are not BFFs. In the land of Paleo, some indulge and some don’t – there is no steadfast rule. But since my personal Paleo county is dry, I thought it would be fun to get a little creative.

Now just because this mojito isn’t spiked, doesn’t mean it isn’t great for a good time. In fact, as I prepared my Cinco de Mayo feast, I offered my photoshoot mojito to mi madre and she went back for seconds. Her words describing this liquor free concoction were “light and refreshing.” So drink up mojito lovers, no hangovers here!

Ingredients:

  • 10 fresh mint leaves
  • Juice from 2 small limes
  • 2 teaspoons local raw honey
  • 1/2 cup crushed ice
  • 6 ounces sparkling mineral water
  1. In a glass, muddle (crush) the mint, lime juice and honey – I used this one
  2. Add crushed ice and then pour sparkling mineral water over ice
  3. Stir slightly and serve

Jennifer is a wife and mother of 3 in pursuit of better health for her family.

Her recipes are predominantly paleo, meaning they are free of grain, gluten, dairy, and refined sugar, but make allowances for a few treats and sweets. She believes food can be medicine when used appropriately and that a few changes now can equate to huge benefits later. Healthy food does not need to be flavorless and void of personality, which she aims to accomplish through her many recipes.
