Cranberry Sauce TWO Ways

When I asked y’all the other day if you grew up eating jellied or whole berry cranberry sauce, I was surprised to see it just about split down the middle.  I personally grew up eating the jellied stuff. Right outta the can.  I am just fine admitting this because honestly, I thought it tasted pretty…

Paleo Dessert Fritters {AIP}

A few things happened today in my kitchen.  First, I went a little crazy after being on vacation for a week and HAD to get crackin’ on more recipes for Down South Paleo with my deadline fast approaching.  And 2nd,  I started feeling guilty about all the food pics I’ve been posting for the book…

REAL LIFE PALEO

In my relatively short time blogging about eating a paleo-ish lifestyle, I have heard my share of excuses: it’s too hard, it’s too time consuming, it’s too expensive, it’s too much work to make the transition, my kids won’t like it, my spouse won’t like it, I can’t live without “xyz”.  And here’s the thing…

DOWN SOUTH PALEO… MY BOOK!!!!

Have you ever had that friend that tells you how awesome your birthday gift is going to be, except that your birthday is months away??! “You’ll love it,” she says. And then you get to count down until you actually get to open the darn thing?! Well I might be that friend… Because I am…

While I am busy working on a very exciting “project” (details posting on November 1st), I asked the VERY talented and EXTREMELY creative The Foodie Teen to share something extra special on Predominantly Paleo.  Well not only did she deliver, but she has seriously BLOWN me away….again! When I say that everything this lil lady…

The Paleo Approach Dinner Club E-Book

If you remember not long ago, I posted a review for The Paleo Approach Cookbook from Dr. Sarah Ballantyne.  This was an incredible sequel to her first book, The Paleo Approach, outlining the specifics of the Autoimmune Protocol for healing autoimmune diseases. Well today I am elated to announce her FIRST E-book launch, The Paleo…

Paleo Cafe Mocha

I have made a lot of sacrifices in the name of healing, but coffee isn’t one of them.  I kept my one cup a day because frankly, I am a better mom, wife, and person with it.  I don’t want to get all crazy about my coffee but I am a loyal follower.  The funny…

Mediterranean Paleo Cooking

My first assignment as a military spouse was in Germany, back in 2004.  Actually, I should rephrase that as we weren’t actually married when we moved abroad until we decided to elope in Denmark on a whim.  Anyway, this was pre-parenthood and so our two years spent in Europe consisted of eating, travel, and food….

Paleo Bread Stuffing

I have a confession to make.  Growing up, Thanksgiving dinner to me meant a mountain of Stove Top stuffing, suffocating in gravy with a small side of turkey.  Maaaaybe a dollop of canned cranberry for good measure.  But really it was all about the stuffing.  Seriously. To me there is no better food for Thanksgiving…

Pumpkin Spice Cupcakes + BLENDTEC Giveaway

I am so stinkin’ excited about this post I could scream!  A few months ago one of my favorite kitchen appliances died.  At first I considered running out and replacing it but instead decided to keep an open mind and research a little.  I saw different ads and posts for Blendtec blenders and was intrigued….

Do you have a plan? No, I’m not talking about retirement funds or hurricane evacuation, I am talking HALLOWEEN CANDY!!! We have done candy buy-backs which are a great way to let the kids pick out something fun…

Paleo Takes 5-or-Fewer Review

One of the biggest complaints I hear about eating Paleo is that the recipes are too time consuming, too difficult, or take too many off-the-wall ingredients.  And sometimes this can be true, I realize.  But I think a great life lesson in the Paleo lifestyle and in life in general should be…. SIMPLIFY!! What if…

Spinach Onion Quiche with BACON + SWEET POTATO Crust

I was so excited to receive a big box of goodies from Barefoot Provisions this week that I instantly started daydreaming about what I’d have fun making. That was of course right after the kids and I finished off eating our weight in Nick’s Sticks, Peppermint Patties, and some Holy Crap Cereal. I mean seriously, it…

Fatco

About

Jennifer is a wife and mother of 3 in pursuit of better health for her family.
After being gluten free for 4 years, and having a multitude of chronic health issues, she realized there was still too much processed “food” in her pantry and change was needed. Jennifer began feeding her family more meals from WHOLE foods and less from boxes. Her recipes are predominantly paleo, meaning they are free of grain, gluten, dairy, and refined sugar, but make allowances for a few treats and sweets. She believes food can be medicine when used appropriately and that a few changes now can equate to huge benefits later. Healthy food does not need to be flavorless and void of personality, which she aims to accomplish through her many recipes.
