Pumpkin Spice Cupcakes + BLENDTEC Giveaway

I am so stinkin’ excited about this post I could scream!  A few months ago one of my favorite kitchen appliances died.  At first I considered running out and replacing it but instead decided to keep an open mind and research a little.  I saw different ads and posts for Blendtec blenders and was intrigued. So when I finally got my hands on one, I was blown away.  This machine is mighty and then some! The touch screen and digital settings make it so easy to figure out what you are doing, especially if you are new to a high powered blender.  To say I was impressed would be an understatement. In fact, I think I heard something to the effect of  “YEEHAW” when my husband took it for a test drive the other night.  And while I can’t confirm this, I think the motor might quite possibly be powerful enough to propel a small vehicle.  It’s that rad. While I have not tried to blend an IPhone or Diamonds yet, I have successfully tried my yuca dough, these cupcakes + frosting, and several other Predominantly Paleo recipes! So today I get to offer up something really AMAZING! First I’ve used my new Blendtec to create a two part recipe.  On this page you’ll find the recipe for  PUMPKIN SPICE CUPCAKES!!! Then if you head over to Blendtec’s blog, you’ll find the CINNAMON FROSTING that pairs perfectly with it!! But that’s not all….

I AM GIVING AWAY A FREE BLENDTEC BLENDER PEOPLE!!!!!!!!!

First up the recipe for the Pumpkin Spice Cupcakes… Ingredients:

  • 3 pasture raised eggs
  • 1 cup organic pumpkin puree
  • 1/2 cup coconut palm sugar
  • 1/4 cup arrowroot flour
  • 1/4 cup water chestnut flour
  • 2 tablespoons coconut flour
  • 1 tablespoon palm shortening
  • 1 teaspoon 100% vanilla extract
  • 1/4 teaspoon ground cloves
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon nutmeg
  • 1/8 teaspoon sea salt
  • 1/8 allspice
  • 1/8 teaspoon ginger
  • 1 teaspoon baking soda
  1. Preheat the oven to 350
  2. In a Blendtec blender combine all ingredients and puree until batter is smooth
  3. Pour into nonstick cupcake wrappers or foil wrappers
  4. Bake for 25-35 minutes or until the centers of the cupcakes come out clean when a toothpick is inserted
  5. Allow to cool completely before adding the Cinnamon Frosting found HERE on Blendtec’s blog page

    So many things that can be blended! I think since it’s fall, I’d use the blender for all things fall – like these pumpkin bars I’ve been wanting to make that use a blender for both the crust and the pumpkin layer 🙂

    My 20 yo Waring is due to give out any day now and with all the nut butter I make, I could really use a more powerful machine at this point! This would allow me to try my hand at nut milks as well. Right now I just don’t have faith enough that something like that wouldn’t do in my trusty friend. Thanks!

    I’ve heard and read so much about Blendtec, but I haven’t been able to bring myself to plunk down the $. So my smoothies are chunky and I don’t use my older two-speed blender for much. I’d love to try regular recipes as well as smoothies, nut butter, and the typical blender items.

    I love all of your recipes. Your yuca dough is a game changer for me. I can’t wait to introduce water chestnut flour into my ingredient rotation as well. Like you, I have a blender that’s on its last leg so I’ve been trying decide which way to go (vitamix, blend tech, or ninja). Of course, cost is a factor, but your endorsement will make me look at blend tech a little closer. Hopefully I’ll get a chance to do it for free! 🙂

    My current blender struggles with the yuca dough. I make it twice a week. I quickly toast it and put almond butter, honey and banana on it as a snack. Of course it’s great for roll ups too. Thanks and keep up the amazing work.

    Why do I need this…ah geez why DON’T i need it…we bake everything Like most paleo families and so we go through blenders food processors etc like crazy! this would last! Wanna try these cupcakes soooo bad…but would probably go with my cinnamon swirl bread recipe first if I won!

    I would LOVE a blender so I can make protein smoothies for breakfast. I have multiple food allergies/intolerances, and breakfast is the hardest meal to prepare. ( allergies to EGGS, and dairy). My nutritionist keeps urging me to try smoothies for bkf, but I have not invested in a blender yet.

    I’ve always wanted either a Blendtec or Vitamix, but they’re so expensive. Honestly I want one so that I can blend things up better. There are some ingredients that just need a high powered blender in order for the recipe to work. Plantains are hard to work with and would blend up perfectly in a Blendtec. The first thing I would make would be a smoothie, followed by pureed Butternut Squash soup, and then a nut butter.

    I need this blender because my current blender is an ancient Oster that won’t even properly blend cauliflower and cheese. The pitcher part is plastic and so spiderwebbed with cracks that you can’t see what’s inside. The first thing I’d make would be your awesome sounding pumpkin spice cupcakes.

    My coworker just told me about BlendTec blenders today! My blender is terrible – of course it never occurred to me to look for another one, I just lived with it. Then I found out that my mom has a Vitamix and it is apparently the best thing since sliced bread. Since I can’t eat grains, I don’t really have a response to that . . . But dadgum!! That is one expensive blender.

    I was telling my coworker about my discovery (of my mom’s blender and the cost) and she mentioned that she has a BlendTec blender and it was significantly less expensive, but well worth the money.

    Then I saw this post. It must be . . . sheer coincidence, lol!

    I would love to make the cupcakes, but I’m diabetic and anything even resembling bread makes my digestion come to a complete stop for 2 or 3 days. I will, however, look longingly at the picture of the cupcakes for several days to come.

    I need this badly! I am under treatment for Lyme disease and co-infections, and my 9 yr old and I were diagnosed with several food sensitivities – the integrative doc recommended that I get a VitaMix to help with my new diet requirements, and I’ve been comparing the Blendtec and Vitamix for a few months now. I think the first thing I would use it for would be to make my own ground nut flour (we have to be grain and gluten free).

    Question – I don’t have water chestnut flour (first I’ve heard of it) so what can I add instead? More coconut? More arrowroot? Maybe rice flour or tapioca? We are grain and gluten free (and I can’t do almond flour though my daughter can eat it).

      Not sure of an exact sub, you could try more arrowroot or rice flour but I have not tried that. Maybe just play around!

    I would love the Blendtec! I have heard that it is easier to get the stuff out compared to a Vitamix. I would make almond butter as that is always a hard one to scrape out! Thanks!

    I need a good, powerful blender! My blender is 20 years old and barely makes a milkshake. My son has soooo many allergies. I see a lot of recipes using Blendtec and wish I could make them. I think I’d make a yummy vegetable soup if I won. The weather is finally cooling off here in Long Beach, CA… It was only in the high 70s today 😉 (may not be soup weather, but I still like soup in the fall!)

    You rock the house, if it’s powerful enough for that sticky yuca dough them this machine is the bomb. It is much easier to clean than the vitamix also.

    Well, I don’t really “need” the blender, but I’d love to compare it with my Vitamix. I’d make smoothies and sauces.

    I’ve been wanting a powerful blender fire awhile now. I think the first thing I would make is nut milk, specifically Brazilian nut milk. I don’t think my current blender would do a good job. Plus there are some sauces I make that my blender just doesn’t get smooth enough.

    Ever since my son has been diagnosed with an autoimmune condition, I have been doing tons of research to see how we can help his condition through healthy eating. I am definitely going to try these muffins! A blender like this would definitely help make so many recipes I haven’t even attempted.

    Oh Blendtec! I’ve had my eye on you for so sometime now but my budget saids no. The possibilities of using the Blendtec blender on a daily basis are endless. From smoothies for breakfast, to hummus/vegan dips with lunch, nut butter for snacks, to soups with dinner and countless other recipes found on this amazing website. And less not forget desserts!     I would love to win this, we have an older ninja but it’s not very good at blending things smoothly, I have a picky eater and it would be so amazing if I could get a smoother consistency on some stuff, like smoothie and sauces. I hide a lot of veggies and fruits while still trying to get her to try food at a slow pace without sweating she’s getting enough… I guess if make a smoothie or pasta sauce or healthy Popsicles.     I could really use a great blender like this. I have hashimoto’s and I’m already gluten free and nightshade free. I’ve been grain free for about 30 days now and plan on staying paleo.     I am now on blender three and am still seeking blender zen! Perhaps I should use them to mark the changes in my journey from wheat eater to gluten free to paleo to ketogenic. The recipe looks like something a bit different from the mixtures I’ve tried before and while it’s too carb heavy for me, my husband and daughter will happily taste test these for me!     I have a ninja and have been beyond disappointed! Issues with it have actually ruined recipes. The cost of the ingredients plus the cost of an expensive blender that almost never works (huge chunks and it never blends the bottom inch of the container) have pretty much halted any further incorporation of new recipes and such into our tiny family. I want to try stuff with this yucca dough but I won’t even buy it right now because I have nothing that can handle mixing things appropriately. A Blendtech is something I’d only ever be able to get my hands on by winning, so awesome post and I hope I’m lucky!

    I NEED this blendtec blender because I have a family of 5 that is trying to stay eat in the paleo way. My life would be sooooo much more effecient with a beautiful machine like this.

Jennifer is a wife and mother of 3 in pursuit of better health for her family.
After being gluten free for 4 years, and having a multitude of chronic health issues, she realized there was still too much processed “food” in her pantry and change was needed. Jennifer began feeding her family more meals from WHOLE foods and less from boxes. Her recipes are predominantly paleo, meaning they are free of grain, gluten, dairy, and refined sugar, but make allowances for a few treats and sweets. She believes food can be medicine when used appropriately and that a few changes now can equate to huge benefits later. Healthy food does not need to be flavorless and void of personality, which she aims to accomplish through her many recipes.
