Mom’s Favorite Coffee
I was a big fan of cream and sugar with a splash of coffee for years. Then I transitioned to those flavored coffee creamers in the refrigerated section and was in heaven. Even when I subbed those out for the ‘natural’ version there was still a big problem; two actually – dairy and sugar. Mama had to get creative, because let me tell you, I was not giving up coffee and I do not drink it black. And guess what, I will never go back. I love this combo and I do not feel gross after drinking it. Win win! ingredients:
- 1 Bulletproof coffee pod (or brewed cup of organic coffee)
- 3 tablespoons organic coconut milk (i use native forest pictured below)
- Vanilla creme stevia (i use Sweet Drops)
- 1 tablespoon MCT oil
- 1 tablespoon gelatin
- In an empty coffee mug/cup, put desired amount of coconut cream and 1/2 dropperful of vanilla stevia (or more/less). note: coconut cream may be solidified at top
- Pour/brew coffee over coconut cream and stevia
- Stir
- Sip
- Fall in love

So glad I found you. I ordered some bulletproof coffee pods and look forward to trying them. I am highly hopeful I will enjoy the canned coconut cream. I’ve been using the coconut milk coffee creamer from the dairy case. Not loving it and hoping for this. I don’t use sweetener, and I’ve tried adding some in the past few days but it didn’t help. I’m hoping it’s not the sweetener’s cream flavor that helps more than the coconut cream.

Is there a reason you use the Green container of Great Lakes gelatin over the Orange container? Is there a difference? Just curious Thanks

Candance, the Green I use because it dissolves completely. The Orange I use for making gummies as it congeals nicely. The Orange in your coffee might end up clumpy and sorta gross 🙂

Ok Thanks …I didn’t realize there was a difference. I use the Orange to make my gummies. I will definitely order the green for my coffee. Thanks for the info I wouldn’t want clumps in my coffee (yuck) 🙂

No problem! And just say no to lumpy coffee!
