ingredients:
- 1 cup cashews
- 1/4 cup pecans
- 1/2 cup arrowroot flour
- 2 tablespoons local raw honey
- 1/2 teaspoon baking soda
- pinch of sea salt
- 1/4 cup palm shortening melted
- 1 egg (or omit egg for more of a shortbread)
- 3 tablespoons pure maple sugar
- 1 tablespoon ground cinnamon
- preheat oven to 350
- combine cashews and pecans and ground until texture is fine (i use a nutribullet)
- now add all other ingredients (except for maple sugar and cinnamon)
- blend well and let cookie dough thicken for a couple minutes
- mix your maple sugar and ground cinnamon in a small bowl
- take golf ball size pieces of dough, roll them into balls
- drop each one into sugar mixture and roll around until evenly coated
- place 2 inches apart on cookie sheet and press each cookie until mostly flattened
- bake for 7-8 minutes if EGGLESS, and 10 minutes if you ADDED AN EGG
- if you use the eggless version, let cookies cool completely before handling, they will be fragile and crumbly until then
