scrumptious snickerdoodles

i have already confessed to making a lot of chocolate based treats and i am working on variety,  i promise.  please accept these as a peace offering and a promise of more deliciousness to come! ps for more of a shortbread type snickerdoodle, omit egg.

ingredients:

  • 1 cup cashews
  • 1/4 cup pecans
  • 1/2 cup arrowroot flour
  • 2 tablespoons local raw honey
  • 1/2 teaspoon baking soda
  • pinch of sea salt
  • 1/4 cup palm shortening melted
  • 1 egg (or omit egg for more of a shortbread)
  • 3 tablespoons pure maple sugar
  • 1 tablespoon ground cinnamon 
  1. preheat oven to 350
  2. combine cashews and pecans and ground until texture is fine (i use a nutribullet)
  3. now add all other ingredients (except for maple sugar and cinnamon)
  4. blend well and let cookie dough thicken for a couple minutes
  5. mix your maple sugar and ground cinnamon in a small bowl
  6. take golf ball size pieces of dough, roll them into balls 
  7. drop each one into sugar mixture and roll around until evenly coated
  8. place 2 inches apart on cookie sheet and press each cookie until mostly flattened
  9. bake for 7-8 minutes if EGGLESS, and 10 minutes if you ADDED AN EGG
  10. if you use the eggless version, let cookies cool completely before handling, they will be fragile and crumbly until then

Healthy food does not need to be flavorless and void of personality, which she aims to accomplish through her many recipes.
