Well yesterday was certainly a day for the history books. I know I certainly was a captive audience watching the day unfold. And nonetheless, dinner time would roll around and my children, also shocked by the day’s events, would need to be fed. I found myself torn between creating recipes and trying to keep my terrified mouth closed.

Anyway, I had a plan to create two recipes today, and I did. Not without distraction, obviously, but these meatballs were top on the list. I was super excited to see this idea in my mind and even more excited to see it unfold in real life. I wanted to make sure the veggies were cooked and didn’t release too much liquid and make the meatballs funky.

I knew I wanted the sauce built into the meatballs, because a flavor packed meatball is what the world needs. What if we didn’t have to soak them in sauce because the sauce was already built inside? This is where I want to be….mid-bite of a saucy meatball. What happened next was even more awesome! The sauce caramelized and became the meatballs’ own inherent glaze. So not only are they delicious, they are gorgeous, shiny, glazed meatballs, made with little effort and all the reward. Oh and PS if you haven’t gotten in on the air fryer game, I urge you to get started. It has replaced my toaster oven and takes up the same space and we use it daily!!! Read my full review HERE.

Ingredients

Scale
  • 1 pound ground beef
  • 2 cups stir fry veggies, steamed and softened (leave out nightshades for AIP)
  • 1/4 cup coconut aminos
  • 1 teaspoon sriracha (omit for AIP)
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/4 teaspoon sea salt
  • 1 tablespoon honey

Instructions

  1. Combine all ingredients in a mixing bowl, using hands to combine
  2. Form mixture into 2″ meatballs and place on the tray of your air fryer
  3. Cook at 375F for 10 minutes
  4. Serve right away
