Looking to feed a crowd easily for any meal of the day? This TATER TOT BREAKFAST CASSEROLE does the trick and comes together without browning the meat in advance!

I swear my kids are going to eat me out of house and home sometimes. I remember when I could make a dinner using a pound of meat and have leftovers for the next day. No longer! So like every household with growing teens, I’ve had to get more creative with how I stretch a meal or make enough food without breaking the bank.

My solution: more casseroles please!

Tater Tot Breakfast Casserole

Despite negative feedback that my casseroles are ugly, I will keep making them as long as I’ve got an intact baking dish. This is the easiest, most filling method I can use, besides my beloved Instant Pot recipes of course, to make sure the fam is fed. But this casserole has a kicker that makes it even better… no precooking the meat!

Yep, like some of my other one pot meals, this one does not require you to brown the meat in advance. You can see in the reel on Instagram HERE how I just press the sausage right into the pan. That saves you 10 minutes right there y’all! Then just layer the rest of the ingredients and pop it into the oven. We all loved it and the kids told me I could “make this one regularly” which is always a great compliment and sweet relief!

Ingredients

Scale

1 pound breakfast sausage
•5 eggs
•8 ounces shredded cheese, vegan if dairy makes you violent
•1/4 cup milk of your choice (I used oat)
•salt, pepper, garlic powder, and onion powder
•1 bag frozen higher quality tater tots, you can use sweet potato tots too

Instructions

1. Press sausage flat
2. Mix eggs, seasonings, and cheese
3. Spread flat onto sausage
4. Arrange tots on top and bake for 40 at 350F then another 20 at 425F or until tots are crispy on top
5. Slice and serve

    Milk goes in with egg mixture I’m assuming?

      I was wondering the same thing. There’s no mention of the milk in the instructions.

    This was so good. I used ground chorizo. Totally worth heating up my house on this 115 degree day.
