If you are looking for a Fall treat sans pumpkin, stop right where you are! These Paleo Apple Cider Fritters are the answer and they couldn’t be easier!

So you can’t do pumpkin everything you say, I get it. When the leaves turn, I am probably most excited about leggings, Uggs and fires in the fireplace, and least excited about the onslaught of PSL enthusiasts. Don’t get me wrong, I can hit a stack of my PUMPKIN PANCAKES or LOAF but I can also empathize with people who are less jazzed.

So today I got real excited when I realized that it was 2 days from October and apple cider is back on store shelves begging to come home with me. Mind you, I don’t actually like hot apple cider so much, but all the things you can make with it?! Yes! I immediately saw it at my local store and thought, apple cider fritters, so today I made it happen.

Paleo Apple Cider Fritters

Paleo Apple Cider Fritters

Ingredients

Scale
  • 1 bag Legit Bread Company Pancake Mix
  • 2 cups apple cider
  • 1 heaping tablespoon apple pie spice
  • 1/4 cup + 2 cups avocado oil or coconut oil, divided
  • 6 eggs
  • 1 tablespoon apple cider vinegar
  • 1 cup coconut palm sugar or maple sugar

Instructions

  1. Preheat 2 cups of oil in a small saucepan over low/medium heat.The oil should be at least an inch deep in the pan
  2. Place the cup of maple or coconut sugar in a bowl for dredging
  3. In a mixing bowl combine the remaining ingredients and whisk or stir to combine
  4. Once the ingredients are mixed well, use a cookie scoop, melon baller, or spoon to drop around 2 tablespoons of batter into the hot oil
  5. Allow the fritter to cook for around a minute or two or until golden brown and cooked inside, then use a slotted spoon to remove the fritter (letting excess oil drip off) and roll the fritter in the sugar bowl
  6. Place the finished fritter on a clean plate
  7. Repeat with additional batter until all the fritters are made, making sure to dredge them in the sugar before serving

    Is one bag of the mix equal to one dry mix of the recipe?

    K- I love this recipe! But…(you knew it was coming) do you think it may work to bake these as mini muffins? I treasure my avocado oil and can’t imagine using so much to fry with. ? I know the taste won’t be the same (duh), but just wondering if the batter would work. Also, what do you do with the oil after frying things? Do you strain it and keep it to reuse? Just curious. Thanks for another great recipe! Living in South FL, the only fall feeling I will be getting will come through my taste buds. ?
