so there are these kale chips that i am obsessed with but are *gulp* over 5 bucks a bag. it’s ridiculous and i feel guilty each time i buy them. but they are good, and i mean goooooood. these are a fraction of the cost, satisfy the crunch, and are packed with the good stuff.
ingredients:
- organic tuscan kale (i used the prewashed, bagged from trader joe’s)
- cashew meal
- olive oil spray
- favorite seasoning salt
- paprika
- preheat oven to 350
- remove large spines from kale pieces (these are very bitter cooked)
- spread kale pieces flat to cover a parchment lined baking sheet
- spray olive oil baking spray to evenly coat kale
- sprinkle a light dusting of cashew meal over baking sheet
- lightly season kale with salt and paprika (and any other seasoning you wish to use)
- bake for about 10 minutes or until crispy being VERY careful not to burn
