nutty kale chips

so there are these kale chips that i am obsessed with but are *gulp* over 5 bucks a bag.  it’s ridiculous and i feel guilty each time i buy them. but they are good, and i mean goooooood. these are a fraction of the cost, satisfy the crunch, and are packed with the good stuff.

ingredients:

  • organic tuscan kale (i used the prewashed, bagged from trader joe’s)
  • cashew meal
  • olive oil spray
  • favorite seasoning salt
  • paprika
  1. preheat oven to 350
  2. remove large spines from kale pieces (these are very bitter cooked)
  3. spread kale pieces flat to cover a parchment lined baking sheet
  4. spray olive oil baking spray to evenly coat kale
  5. sprinkle a light dusting of cashew meal over baking sheet
  6. lightly season kale with salt and paprika (and any other seasoning you wish to use)
  7. bake for about 10 minutes or until crispy being VERY careful not to burn

    Got the organic kale in a bag from Trader Joe’s and spent 15 minutes tops from cutting open the bag to tasting these savory goodies. Thank you, Jen, this is a WINNER!

Jennifer is a wife and mother of 3 in pursuit of better health for her family.
After being gluten free for 4 years, and having a multitude of chronic health issues, she realized there was still too much processed “food” in her pantry and change was needed. Jennifer began feeding her family more meals from WHOLE foods and less from boxes. Her recipes are predominantly paleo, meaning they are free of grain, gluten, dairy, and refined sugar, but make allowances for a few treats and sweets. She believes food can be medicine when used appropriately and that a few changes now can equate to huge benefits later. Healthy food does not need to be flavorless and void of personality, which she aims to accomplish through her many recipes.
