Paleo Green Goodness Chicken

How y’all like me now? Posting 4 recipes in like a week’s time. Can you tell the Jewish guilt of being offline so long while we were moving has caught up with me? But seriously. I love creating recipes and I love that time spent in the kitchen, zoning out, brainstorming, and trying to contribute something positive to the world. But this move got me like whoa and I am still trying to create some normalcy up in hurrrrr. As it turns out, growing children still need to eat actual food everyday in order to not collapse, so mom duty doesn’t get to be put on hold for long, even when HomeGoods and TJ Maxx are only a block from each other. I know, responsibilities suck. But so does jail, I’ve heard. Anyway, now that I’ve gotten as far away from actual recipe writing as possible, this was our dinner last night. I also made Paleo Panzanella Bread Salad which was dynamite. I’d be lying though if I didn’t tell you the truth which is that I smothered this Green Goodness marinade and dressing all over that salad. It was worth breaking the rules. I wrote this recipe after I remembered how much I loved cilantro. I mean I like LOVE it and the cool thing is it has incredible detox abilities for pulling out heavy metals and all sorts of garbage. So why am I not eating it more!? This is my first step in that direction. I marinated the chicken for a few hours in it and reserved half of it for saucing. Because saucing is more important than any other action at meal time if you ask me, and I’m not even talking wine or cocktails. Catch my drift?

Green Goodness Chicken


  • Prep Time: 5 minutes
  • Cook Time: 10 minutes
  • Total Time: 15 minutes
  • Yield: 2 1x

Ingredients

  • 1 pound pastured chicken breast (or preferred cut)
  • 1/4 cup mayo
  • 1 bunch cilantro
  • 1/4 cup lemon kombucha
  • 1/2 teaspoon sea salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon onion powder
  • 1 tablespoon minced garlic
  • 1 tablespoon honey
  • 3 tablespoons avocado oil

Instructions

  1. Blend the mayo, cilantro, kombucha, sea salt, pepper, onion powder, garlic and honey
  2. Pour HALF of the mixture into a large zip top bag and place your chicken inside until it is submerged
  3. Chill for 4 hours if you have time, otherwise chill for as long as you can
  4. Reserve the remaining sauce for after the chicken is cooked
  5. Once ready to cook, heat the avocado oil in a skillet over medium heat then place your chicken in the heated oil
  6. Discard the marinade that the chicken was in and cook on each side for around 5 minutes or until cooked through
  7. Now serve with the remaining Green Goodness sauce and my Paleo Panzanella Bread Salad
