grain free banana nut bread (with chocolate chips)

well, there is a first time for everything, and this was mine. to be quite honest, i am not even sure i’ve made banana bread before today. so this little experiment could have been inedible. no seriously, i’ve trashed food that not a single person in this house could choke down.  lucky for us all, this one is not to be trashed.  in fact, my husband who proclaimed that he does not like banana bread, liked this banana bread.  i’ll take that as two thumbs up.

ingredients:

  • 2 slightly ripened bananas
  • 3 eggs 
  • 1/2 cup arrowroot flour (yes again, it’s my fave)
  • 1/4 cup vegan milk (i used coconut)
  • 3 tablespoons local raw honey
  • 1 teaspoon organic vanilla
  • 1/3 cup vegan butter melted
  • 1/2 cup pecans
  • 1/4 teaspoon sea salt
  • 1 teaspoon baking powder
  • optional:  1/2 cup chopped walnuts
  • optional:  1/2 cup vegan chocolate chips (i use enjoy life)
  1. preheat oven to 350
  2. combine all ingredients except for walnuts and chocolate chips in a blender
  3. yes, a blender (i used my nutribullet)
  4. blend until consistency is smooth
  5. add chocolate chips and walnuts and mix by hand
  6. pour into greased bread pan
  7. bake for 50 minutes to 1 hour or until baked through

    This was so easy to make and delicious, thank you for the recipe. I made it exactly as written while my kids were at school and they ate the entire loaf when they got off the bus. I am going to make this every time I have ripe bananas to use up!
