Bacon Wrapped Sweet Potato Fries {Paleo, AIP}

Fast forward to 2017….
I am laughing at this so hard. This was one of my very early blog posts in 2013! I was such a spring chicken “blogger” and recipe writer back then and I just giggle at the journey this has taken me on. And it’s such a reminder of how eating healthy really is a step by step path. There are so many mountains to climb and ditches to fall in and even here, 4 years later, I still face the same challenges.
Do I eat the cheese that I’m craving? Am I eating too many treats? Am I the only one not eating low carb or keto?
Ultimately, your path is your path. You have to find what works for you, your wiggle room and your “absolutely nots”. I love being able to look back here though and see that through it all, Bacon Wrapped Sweet Potato Fries {Paleo, AIP} are still really freakin’ good and make everyone happy.
Ingredients:
- 1 pack nitrate free pasture raised bacon (organic when possible)
- 1 large sweet potato
- Freshly ground garlic sea salt to taste
- Preheat oven to 425
- Slice sweet potato about 1/2 inch thick
- Slice bacon in half lengthwise, then half again widthwise
- Wrap each sweet potato slice with a strip of bacon and arrange on baking sheet
- Sprinkle with garlic salt
- Cook for 15 minutes then flip fries to brown the underneath for another 15 minutes (more or less)
- Enjoy alone or with my homemade ranch dressing

Ohmigod, I made these tonight! As someone who loves bacon and eats a lot of sweet potatoes, I had high hopes for these, and I was still surprised at how amazing they are! I nommed them right up!
I do have a question, however. When I turned them over at the halfway time, the bacon fell right off some of them. They weren’t sticking to the pan; the bacon just fell off when I turned them over. Is there a trick to wrapping or turning them, or are those just the bonus payment for the cook?

I wrap them really tight and place the ends face down on the baking sheet, that way they have a chance to “seal” as they bake before flipping them over. Think that would help you?
