Nobody wants to make the naughty list but with this AIP Paleo Lump of Coal Cookies, you might just ask to be added!

Well I’m not proud to admit that I haven’t blogged a new recipe in several months. And I could sit here and make excuses about “busy” or tell you how I’ve actually compiled a substantial list of the things I’m GOING to make, like these cookies; but honestly none of that matters. The pressure we create for ourselves by letting the thoughts and expectations of others infiltrate our own minds gets a little insane sometimes.

But alas, here we are – made it through Thanksgiving (barely), made it through the launch of 3 new Legit Bread Company products (barely), survived Hanukkah (barely), breezed through my birthday week (barely), and now we’re on cruise control until the new year. JK it’s probably going to be more of the same, which is a lot of everything. 

Ok back to the recipe just in the St Nick of time! I had this idea months ago as well and thought it would be so fun and kitschy for Christmas. While I don’t personally observe, my father is Christian and we are fortunate enough to be able to spend the holidays together, we do all the things. Stockings are always my favorite; special thanks to Fritos and bean dip, a family tradition. So my idea with these is to drop a few in each stocking as edible lumps of coal – they can be kept completely AIP compliant with our new cookie mix from The Castaway Kitchen, or you can add some additional cocoa if tolerated. AIP PALEO LUMP OF COAL COOKIES

AIP Paleo Lump of Coal Cookies

AIP PALEO LUMP OF COAL COOKIES

Ingredients

Scale
  • 1 bag Allergen Friendly Cookie Mix from The Castaway Kitchen
  • 1/4 cup maple syrup
  • 1/2 cup melted butter, ghee, or coconut oil
  • 1 tablespoon activated charcoal or Takesumi Supreme
  • Optional: 1 tablespoon cocoa powder or carob powder for AIP

Instructions

  1. Preheat your oven to 350F
  2. Combine all ingredients in a bowl with the cookie mix, stir to combine
  3. Use a 1″ cookie scoop to drop rounded spoonfuls onto a baking sheet, do not flatten, they will spread slightly
  4. Bake for 10 minutes
  5. Allow to cool before serving
