Trail Mix Tuna Salad

Or you can call this the 5 minute miracle meal…it is that easy to toss together!. In fact, it is such staple in my house, I can barely call it a recipe. Take tonight for instance…we got home from a very spontaneous trip to Annapolis, followed by a fun seafood lunch in Old Town. After running around the entire holiday weekend, I knew I would not be “cooking” dinner. In 5 minutes there was Trail Mix Tuna Salad with sweet potato chips and we were all happy and well fed.

While it’s true that food prep can take a little longer when you are grain free and dairy free, there are tips and shortcuts to make life a little easier as well. This is one of them! Work outside the home? Bring the goodies with you and mix this up at work! Done and done. Want to make homemade sweet potato chips? Go for it, they are a perfect accompaniment! Rather scoop it onto a bed of greens? Even better! Sometimes keeping it simple is the way to go and that is exactly what this will accomplish!

Ingredients:

  • 2 cans sustainably caught tuna (10 ounces total)
  • 3-4 tablespoons high quality mayo, like homemade
  • 1/2 cup trail mix of your choice with good quality nuts, seeds, and dried fruit (if desired) – try avoiding peanuts and over-sugared mixes; keep it simple and clean!
  1. Combine all ingredients and serve or chill for later (yes it’s that easy…ridiculously easy)

Healthy food does not need to be flavorless and void of personality, which she aims to accomplish through her many recipes.
