Paleo French Toast

Grain free, dairy free french toast?!!? Say it isn’t so.  Well, it IS so! So good that is. 

I worked hard to develop several recipes for paleo bread which I felt could embody the texture and flavor of some of our old favorites. In addition to those, I’ve also since launched Legit Bread Company where you can find both the ready to eat loaves and also mixes to bake up fresh yourself! 

Whichever loaf you use, you’ll find this recipe definitely fits the bill and satisfies all the cravings for French toast without any of the ill side effects of the original version!

    Ingredients

    Scale
    • 1 loaf of my grain free bread
    • 2 eggs
    • 1/2 cup flax milk
    • 1 tablespoon honey
    • 1 teaspoon vanilla
    • 1/4 teaspoon cinnamon
    • 2 tablespoons coconut oil

    Instructions

    1. Beat eggs, milk, honey and vanilla
    2. Slice bread into 1/2 inch slices (thicker if you prefer
    3. Soak bread slices in egg mixture for a few minutes each
    4. Melt coconut oil in skillet over medium heat
    5. Once soaked, place into oiled skillet
    6. Cook on each side until browned
    7. Remove from oil and sprinkle with maple sugar or 100% maple syrup

Jennifer is a wife and mother of 3 in pursuit of better health for her family.
After being gluten free for 4 years, and having a multitude of chronic health issues, she realized there was still too much processed “food” in her pantry and change was needed. Jennifer began feeding her family more meals from WHOLE foods and less from boxes. Her recipes are predominantly paleo, meaning they are free of grain, gluten, dairy, and refined sugar, but make allowances for a few treats and sweets. She believes food can be medicine when used appropriately and that a few changes now can equate to huge benefits later. Healthy food does not need to be flavorless and void of personality, which she aims to accomplish through her many recipes.
