pan fried fish

this is a family favorite, the kids love it – and when 2, 5, and 6-year olds gobble up nutrient dense foods with a smile, you make them over and over. period.

ingredients:

  • 1 pound fish (i use wild caught haddock)
  • 2/3 cup almond flour
  • 1/3 cup coconut flour
  • 1 egg
  • splash of milk (almond, coconut, flax, or dairy)
  • 1/3 cup olive oil
  • 3 tablespoons vegan butter
  • 1 teaspoon onion powder
  • 1 teaspoon pepper
  • 1 teaspoon salt
  • 1 teaspoon salt-free season salt
  • lemon to taste
  1. mix flours and seasonings on a large enough plate for dredging
  2. make egg wash on second plate by combining egg and a splash of your milk of choice and whisking
  3. heat butter and oil on low-medium heat, i set mine between level 3 and 4 (note: almond flour has a tendency to burn on higher heat)
  4. coat each piece of fish in egg wash then dredge both sides in flour mixture
  5. place gently in heated oil, flip after fish begins to brown and flakes easily (just a few minutes on each side)
  6. serve with veggie or on a bed of mixed greens – i like to squeeze lemon and also drizzle greens with my blueberry balsamic vinaigrette!

Her recipes are predominantly paleo, meaning they are free of grain, gluten, dairy, and refined sugar, but make allowances for a few treats and sweets. She believes food can be medicine when used appropriately and that a few changes now can equate to huge benefits later. Healthy food does not need to be flavorless and void of personality, which she aims to accomplish through her many recipes.
