Paleo Breakfast Buffet Skillet


Yep, it’s been one of those days. I was super excited to eat my leftover Hamburger Soup for lunch and then somehow the fact that I needed to make supper snuck up on me. How is it possible that I forget I actually have to make dinner everyday? As if my kids will suddenly morph into cyborgs that don’t need actual sustenance. I mean what is that anyway? I’ve been a mother for 11 years and they’ve always required food to survive. Weird isn’t it? Anyway, today was one of those one thing after another days and I would have 100% lost my head if it were not attached to my body. But the good thing is I made lots of headway on stuff I’ll be announcing soon to you! Side note, can you freakin’ believe Thanksgiving is next month?! Another shocker, that this holiday keeps rolling around every year like clockwork and I’m always surprised by it. Clearly I need professional help.

Anyway, here rolls in dinner time and I’ve got 3 starving small humans and no plan so I open my fridge, stare into it as if it might give me the answer to world peace, and finally start grabbing things. I had:

  • Legit Bread
  • Eggs
  • Sausage
  • Potato Salad

So guess what dinner is? Yep, you guessed it. But before you ask if I’ve lost my everlovin’ mind, just try it. It’s totally edible.

Ingredients

Scale
  • 2 tablespoons ghee
  • 1 cup potato salad from Paleo Cooking with Your Instant Pot
  • 1 pound breakfast sausage
  • 3 slices Legit Bread, cubed (any variety)
  • 4 cracked eggs, whisked
  • 1 teaspoon sea salt
  • 1/2 teaspoon ground black pepper
  • 1/2 teaspoon garlic powder

Instructions

  1. Heat the ghee in a large skillet and then add in the sausage and potato salad 
  2. Saute until the sausage starts to brown then add in the eggs and Legit Bread cubes (around 5-8 minutes)
  3. Cook until the eggs are cooked through, they’ll be scrambled in with the rest of the skillet (around 4-6 minutes), shifting the ingredients regularly
  4. Sprinkle with the seasonings and shift once more before serving
