Paleo Cupcakes in a Cone

Ok paleo party people, it’s time to celebrate.  this idea is not mine, even the idea to paleofy it is not mine. but the recipe is! so put on your baking hats and let’s par-tay!

This recipe is especially fun for the kids and can be made with very little sugar and absolutely zero grain. One thing to note is these ice cream cones had very minimal sugar in them and use potato and tapioca starches! Perfect for a paleo treat when you need one or for a birthday party!

I find the cones at my local healthfood store but they are also available HERE [3] if you are having trouble finding them!

Ingredients

Scale
  • 1/4 cup arrowroot flour
  • 1/4 cup vegan butter melted
  • 3 eggs
  • 3 tablespoons coconut flour
  • 2 teaspoons organic vanilla
  • 3 tablespoons coconut palm sugar
  • 1/4 teaspoon salt
  • 1/2 teaspoon baking powder
  • 1 box gluten free ice cream cones  [4] (these use potato starch and tapioca and have such little sugar it does not register as more than 0 grams)

Instructions

  1. preheat oven to 350
  2. place cones in cupcake tins
  3. combine all other ingredients in blender (i use nutribullet)
  4. let mixed batter thicken for a few minutes
  5. fill 3/4 ice cream cones with batter
  6. bake for 20-22 minutes or until baked through
  7. let cool and top with my fluffy paleo chocolate frosting [5]
  8. (will only make 5-6 so you will need to double if you wish to make more)
