As some of you saw, my wife Simone from Zenbelly [3] was here last week and it was THE BEST! We baked, we drank, we ate… naturally. But most of all, we got to just hang out with each other and snuggle puppies and not do much of anything. Y’know, because there’s a pandemic and sh*t. 

The last night she was here we scrambled to pull off a little Hanukkah something or other and here’s how it went down. 1. We made latkes from a box 2. We picked up takeout BBQ because the brisket she ordered didn’t arrive in time. But you know what? It was perfect and extra 2020 of us to throw down our festival of lights this way.

Monday we said goodbye to Simone and Simon and also sadly had to say goodbye to one of our beloved family members. He lost his life to Covid-19 and so we have spent this week catching our breaths and mourning from afar. Death in 2020 looks so different, without  being able to come together and mourn among family. It is bizarre and quite sad to be honest. 

I don’t want this post to be a downer, but I do want to remind everyone that the virus is real, it is a risk to us, even if we eat kale, and we need to continue being vigilant and loving thy neighbor. That means considering others and their safety, not just self. This is not debatable and is literally the foundation of every moral, every religion, and every fundamental value system. 

With that I give to you these delicious air fryer meatballs made with leftover BBQ sauce, and a gentle reminder to be kind, be thoughtful, and consider those less fortunate this season.

Air Fryer Cheesy BBQ Meatballs

Ingredients

Scale
  • 1 pound ground beef
  • 1 pound ground turkey
  • 1 cup BBQ sauce of choice
  • 2 cups shredded sharp cheddar (or dairy free cheese if this freaks you out beyond repair)
  • 1 teaspoon onion powder
  • 2 tablespoons coconut aminos
  • 1/3 teaspoon ground pepper

Instructions

  1. Combine all ingredients in a medium sized mixing bowl
  2. Form meatballs around 1-2″ in diameter and place them in your air fryer
  3. Cook them at 400F for 10 minutes, you may need to cook them in batches
  4. Serve with extra BBQ sauce for dipping (I used a mustard based sauce)
