Paleo Chocolate Gummy Bears You know that thing you do as a
mom, human, where you use food to reward?! And it’s sort of a double-edged sword because you don’t really want to reward yourself or anyone else <<little people>> with junky garbage and call that a prize. That’s like Healthy Relationship With Food 101, right? But then there’s also the part of you that’s like, hey I <<they>> deserve “x” because food is also a feel good thing and part of the joy of life. So it’s complicated. And a little confusing. But here’s the thing… As a mom of 3 healthy kids who eat their veggies and are otherwise active, decent creatures who do not assault others or live off Tootsie Pops, I totally reward with food. Not everyday, but when it makes sense. Today was the first day of a week that I would be single parenting while running a a few businesses while my husband travels overseas. And I need things to be simple. I also need my kids to err on the side of happy so I don’t lose my everlovin’ mind. So we are doing things like renting movies, playing with friends, and making homemade goodies. Today’s fun project was making these Paleo Chocolate Gummy Bears because: A) They helped pass the time B) They gave us a fun activity to do together that wasn’t laundry C) They aren’t total $h*t D) Even the picky friend who much prefers fast food liked them (I win) E) They finally have a killer gummy bear mold that isn’t oversized. Find it HERE ! Ultimately these are more of a treat than organ meats, let’s be honest. But they also have gut healing gelatin and are not sweetened with corn syrup. So while I’ll never win mom of the year, I also didn’t get called the meanest mom ever so there’s that. Print 
Paleo Chocolate Gummy Bears
- Prep Time: 2 minutes
- Cook Time: 5 minutes
- Total Time: 7 minutes
- 1 cup flax milk (or coconut milk)
- 1 tablespoon organic cocoa powder
- 2 tablespoons grass fed gelatin
- 2 tablespoons 100% maple syrup
- 4 drops vanilla extract or vanilla stevia
Combine all ingredients except the gelatin  (this is gelatin not collagen – collagen does not congeal) in a small saucepan over medium heat and whisk until well combined.
Now add in the gelatin and continue whisking so there are no clumps.
Using the pipettes that come with THIS  set, fill the gummy bears molds (you may have a little bit of mixture left which you can use in another mold.
Transfer the molds to a cookie sheet and place in the FREEZER for around 20 minutes. The freezer is essential because it helps you retrieve these little friends without them breaking apart.
Remove from the freezer and pop them out. Easy peasy.
