All the food groups in one soup? You bet! That’s why I call it Instant Pot FOOD GROUP SOUP! Catchy isn’t it?

Thanksgiving 2020 is officially behind us, for better or worse. How was it for you? I hope it was peaceful if nothing else. And we are now heading straight into December – are we glad about it? Who even knows anymore. But I’m happy about this. I have successfully shoved all the food groups into this soup: meat, grain, veggies, fruit, dairy, and fat! We may not always agree that we need all the groups, but nevertheless they are all repped here. Adjust as you want, no need to feedback me to death.

The good news is though, this soup is so easy to adapt. Don’t want dairy? Leave it out or swap it with a dairy free version. Don’t want carbs? Leave out the pasta. You  can basically edit this soup backwards and forwards and still end up with something edible. Naturally I recommend it how I made it, but you do you sugar lips.

Also seeing as I am turning 44 in just a few days, I have some sage advice for those of you feeling lost this year. Cue up Netflix, start Gossip Girl at the beginning, and put on your favorite PJs. It’s time for a marathon with this soup, all seasons of Gossip Girl, and your favorite place to snuggle. I’m not saying I have life completely figured out, but I’m 100% confident that 6 long seasons of mindless on demand entertainment are the answer to your everything.

Instant Pot Food Group Soup

Ingredients

Scale
  • 64 ounces beef broth
  • 1 can Rotel tomatoes and peppers (or similar), undrained
  • 1 pound ground beef
  • 8 ounces dried gluten free pasta
  • 3 tablespoons avocado oil
  • 1 cup chopped carrots
  • 8 ounces cream cheese (dairy or vegan)
  • 1 onion chopped
  • 1 teaspoon sea salt (or more to taste)
  • 1/2 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon Nom Nom Paleo’s magic mushroom powder

Instructions

  1. Press the saute feature on your Instant Pot
  2. Add in the onion and oil and cook until translucent
  3. Add in the ground beef and break it up, cook until no longer pink
  4. Now add the carrots, broth, seasonings, and pasta
  5. Cook on high pressure for 4 minutes, yes 4
  6. Release pressure and remove lid once safe to do so
  7. Stir in the cream cheese and serve topped with asiago cheese
