Instant Pot  Blissful Brownies One of my favorite pearls of wisdom from a disgruntled reviewer was “Just because you CAN make it in an Instant Pot  doesn’t mean you should.” And while I could easily agree with this statement to a degree, I actually DO find the value in having the possibility. Because here’s the thing. Just because you CAN make brownies in the oven, doesn’t mean you always should. I mean that seems a little nuts, mmm pecans, but in the dead heat of Summer when you want brownies and don’t want a 2000 degree kitchen, NOW YOU CAN. Or when you live in a dorm room and don’t even HAVE a full kitchen. I’d say college students deserve brownies too, amiright? So to the disgruntled naysayers who are #AntiInstantPotBrownies, look away, or better yet, go preheat your oven. These aren’t for you. For the rest of you who have an open mind, a dorm room, an RV, a hotel room, or a hot a$$ kitchen in the middle of July, these are for you. Go make some brownies in a pressure cooker and enjoy your spirit of adventure with a little chocolate on the side. Print 
Instant Pot Brownies
- Prep Time: 5 minutes
- Cook Time: 35 minutes
- Total Time: 40 minutes
- Yield: 6
- 1 egg
- 1⁄2 cup (118 ml) cashew or almond butter
- 1⁄4 cup (48 g) cassava flour (or arrowroot)
- 1⁄4 tsp sea salt
- 3⁄4 cup (144 g) maple sugar(or date sugar)
- 1⁄3 cup (79 ml) 100% maple syrup
- 2 tbsp (30 ml) ghee or sustainable palm shortening, melted
- 1 tsp (5 ml) 100% vanilla extract
- 3 tbsp (20 g) cocoa powder
- 1 cup (240 ml) water
- Combine all of the ingredients, except the water, in a mixing bowl and stir to combine.
- Spoon the contents into a small greased glass baking dish that will t inside your Instant Pot. Pour the water into the stainless steel bowl of your IP, and then lower it into the steaming rack.
- Make a foil “tent” to cover the brownies so they are protected from the moisture.
- Place the covered dish onto the steaming rack and secure the lid.
- Next, close o the pressure valve and press the Manual button. Press the “+” button until 35 minutes is displayed.
- Allow the brownies to cook and when the cycle is complete, quick-release the pressure valve.
- Remove the lid when safe to do so and carefully transfer the brownies out of the pressure cooker and into the refrigerator to set.
- Leave them to chill for about half an hour, and then slice and serve. You can top them with dairy- or soy-free chocolate chips or crushed nuts like pecans if you like. These are a fudgier type brownie as compared to a cakey one due to being pressure cooked.
