Can you even believe a Grain Free Tex Mex Casserole could be THIS scrumptious and flavorful? Yes, even without corn tortillas. Amazing!
The Quick N Dirty series continues! This is recipe 5 so far and y’all are eating them up (see what I did there?). This one was FANTASTIC! I seriously cannot believe how much flavor was packed into one little casserole dish. And it was so filling that we were able to eat on it for 2 consecutive days.
I suspect this one would freeze well, though honestly we never gave it a chance since we were too busy enjoying it. You can easily sub the dairy in this one with so many great dairy free cream cheese options on the market now. But I wouldn’t omit it as the creaminess definitely amplifies the flavor, helps solidify the casserole appeal, and also balances out the robust flavor of the seasonings.
I’d love to hear from you too! Let me know what kind of Quick N Dirty meals you are looking for. I hope to continue to create easy, budget friendly, and time-saving recipes as this crazy year continues. And I also feel comforted knowing that I’m not the only person exhausted and burned out. This experiment has actually really helped me get inspired again to cook (especially since these are so easy), and I’m glad you’re enjoying them too!
So shoot me a message and let me know what other quickies you’d like. Breakfast? Soups? Casseroles? Skillet meals? Tell me what you want, what you really really want. And until then, get into this recipe, y’all will die for it.Print
Grain Free Tex Mex Casserole
- 16 ounces pico de gallo (I got mine already made)
- 8 ounces cream cheese (regular or dairy free)
- 1 pound raw ground beef use code Jen10 for a discount!
- 6 Siete Foods grain free tortillas (I like the almond or the cassava ones)
- 3/4 packet Primal Palate Taco Seasoning (probably about 2.5 tablespoons?)
- 8 ounces shredded cheese (dairy free or otherwise for the eleventy kadrillionth time)
- Preheat your oven to 350F
- Lay down 3 tortillas overlapping in a casserole dish. Or do 4, I don’t care.
- Combine the cream cheese and pico and stir well
- Spoon 1/2 cup of this mixture on top of the tortillas and smooth out
- Pinch apart half the ground beef and place the bite sized pieces on top of the pico mixture
- Sprinkle half the taco seasoning, or more, I’m not the seasoning police
- Top with half the shredded cheese or don’t. I’m tired
- Repeat all steps if I haven’t offended you enough by using dairy and then bake for 45 minutes
- Serve with a smile or a scowl, depending on how bad your attitude is that day
Haven’t made, but will. I know it will be good, so I’m already giving it 5 stars, for snark alone ?
Best recipe and directions ever 🙂 Can’t wait to give this a try!
I made it, did not sub the damn cheese and it was great. Thank you!!!
Have not tried this, but based on the pictures I definitely will not.
It looks very unappetizing.
I can’t get over how very bad it looks–remember, we first eat with our eyes!!
You can do better than this.
Jeff, I can’t get over how bad your manners are. What value does it add to comment about your opinion about how a dish looks? Did you stop and consider the time it took for Jennifer to prepare the meal, write down measurements, type up this post…for free? The beginning of the post discussed how this is part of her “Quick & Dirty” series….it’s not about aesthetics, it’s about getting a delicious and healthy meal on the table. Every single dish I’ve ever made of Jen’s has been mouthwatering, flavorful and ones I come back to time and again. I kindly believe you could do better with your manners.
This looks like a mouth watering, belly warming so so scrumptious casserole. Thanks so much for creating this yummy food with so many options available to different dietary needs! You have outdone yourself again!! Thanks Jen????
Oh goodness Jeff, it seems you’ve not had a casserole before and for that, I’m so very sorry. I can’t get over how very bad your life experience must be – remember, we should try new things. You can do better than this!
Jeff – You haven’t made it. You should NOT be reviewing this recipe based solely on your opinion of her pictures. I have NEVER seen a casserole type dish look good. Try again not to be a jerk.
Siete tortillas are the best! This is amazing with Violife Colby jack dairy-free cheese!
Made this tonight i just to spite Jeff and it was freaking bomb! Took no time to put together and was such a comforting dish to eat after a long week. Thanks Jennifer for the recipe!!
I am so excited to try this. Thanks Jen for another amazing recipe.

This was mouth wateringly delish and I combined non dairy sour cream PLUS real COBY JACK shredded cheese, JUST to blow Jeff’s mind. Win win. ?
Amazing ? ?
I will 1 million percent be making this recipe this week, and just to get super fu$#*%?crazy, I’m gonna do a keto-ish version of it, because I know you’d approve of me confirming it to meet my needs. Thanks for continuing to put out amazing free and totally stellar content. You’re fabulous, and I appreciate you.
Ooopsies! Forgot to rate, giving it a full five stars because, much like every other recipe I’ve tried of yours, I know I’ll live it.
This came out so good! I’ve tweaked it occasionally but it comes out the best when I stick close to your recipe. Cooking the ground beef with the taco seasoning is still good too (like using up leftover taco meat). Thanks for the delicious recipe!
