Roasted Broccoli (Paleo/Vegan)

Side dishes always seem to take a back seat to main courses but they need not! Sometimes side dishes can be perfectly filling enough to make a main course. This one has a delicious surprise with ground sunflower seeds making it slightly nutty and completely delish!


  • 1 bunch broccoli (2 heads)
  • 2 tablespoons avocado oil (or olive oil)
  • 2 cloves garlic, minced
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon freshly ground black pepper
  • 1/4 cup sunflower seeds ground
  • 1/4 teaspoon onion powder
  1. Preheat oven to 425
  2. Rinse and cut broccoli into florets
  3. In a medium sized bowl toss broccoli with oil, to coat evenly and then toss with the remaining ingredients
  4. Spread evenly onto a foil lined baking sheet and bake for 9-10 minutes or until broccoli is cooked through but not burned

    The roasted broccoli is really easy and quick to make and so delicious! I made a double recipe yesterday morning before work, which speaks to how easy this is since I’m always rushing like crazy to get out of the house, and I’m so happy I did! It was half my breakfast yesterday and will be half my lunch today. 😀
