Oh look, another Instant Pot [3] recipe. But for a good reason! We are knee deep in our halfway-across-the-country PCS (military move) and we are doing our best at not being wasteful. We are dwindling down our refrigerator’s contents and getting mighty creative with our meals in our final moments here in DC.

My husband doesn’t cook that often these days, but we always joked about his infamous “Chicken Surprise” dish, which basically meant chicken + whatever he could dig out of the pantry. Sometimes it was really good. And sometimes it was…

So here we are making Instant Pot [3]Beef Surprise basically. I’m always prepared with my experiments to feed them to a bunch of turned up noses and then pretend they didn’t exist. But sometimes it works out to my benefit and not only do I get a decent meal out of it but I also get a blog post! This is a phenomenon known as “OMG I didn’t screw up!” and it’s a very exciting blip in time.

This was sort of a take on stir-fry beef but since I literally am organizing, painting, and purging, I wanted a toss-it-in-the-IP and use my time accordingly. I got lucky <thank you PCS anxiety angels> and this was a hit.

Ingredients

Scale
  • 12 ounces stir fry beef (I used grass fed)
  • 3 large carrots chopped
  • Juice of 2 small oranges
  • 1/4 cup maple syrup
  • 1/4 cup coconut aminos
  • 1 teaspoon sea salt
  • 2 teaspoons garlic powder
  • 1 teaspoon sesame oil
  • 1/4 cup avocado oil
  • Optional: Sesame seeds to garnish

Instructions

  1. Drizzle the avocado oil and sesame oil into the stainless steel bowl of your Instant Pot [3]
  2. Press the saute button and when the oil has started to heat, drop in your stir fry meat
  3. Allow the meat to sear for just about 30 seconds to a minute and then introduce the remaining ingredients
  4. Press the Keep Warm/Cancel button, secure the lid, and press the Manual Button
  5. Use the +/- button to adjust your Instant Pot until it reads 8 minutes
  6. Make sure your pressure valve is closed and allow the beef and carrots to cook
  7. Once the cooking cycle is complete, quick release the pressure valve and remove the lid when safe to do so
  8. Serve with cauli rice, zucchini rice, or basmati rice if tolerated, garnished with sesame seeds if desired
